Sunday Slow Cooker: Carnitas

Season the pork with salt and pepper
- 2.5 lbs. pork shoulder,lean only, trimmed of fat/li>
- 1 onion, diced
- 3-4 garlic cloves, minced
- 3/4 tsp salt
- 1/2 tsp. pepper
- 1 tsp oregano
- 1 tsp cumin
- 1-2 diced chipotle peppers and 2 tbsp adobo sauce
- 3/4 cup light beer or chicken broth
- 1-2 bay leaves
Fabulous Fruit Salad

In a large bowl, combine the first nine ingredients
- 1 medium honeydew, peeled, seeded and cubed
- 1 medium cantaloupe, peeled, seeded and cubed
- 2 cups cubed seedless watermelon
- 2 medium peaches, peeled and sliced
- 2 medium nectarines, sliced
- 1 cup seedless red grapes
- 1 cup halved fresh strawberries
- 1 can (11 ounces) mandarin oranges, drained
- 2 medium kiwifruit, peeled, halved and sliced
- 2 medium firm bananas, sliced
- 1 large Granny Smith apple, cubed
- 1 can (12 ounces) frozen lemonade concentrate, thawed
- 1 package (3.4 ounces) instant vanilla pudding mix
Tuna Noodle Gratin

1. Preheat oven to 350 degrees
- 1 medium onion, chopped
- 1 stick butter
- 4 cups mushrooms, sliced (8 oz.)
- 2 cloves garlic, chopped
- 1 teaspoon fresh rosemary
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 cup dry sherry
- 1/4 cup flour
- 2 1/2 chicken broth
- 1 cup heavy cream
- 1 tablespoon fresh lemon juice
- 2 (6 ounce) cans tuna in oil, drained
- 6 ounce egg noodles (3 1/4 cups)
- 1 cup sharp cheddar, shredded
- 1 cup oyster crackers, crushed
Ravioli and Capicolla Pie

Preheat oven to 350 degrees
- 1 (20-ounce) package frozen cheese ravioli (see Note)
- 1/2 cup prepared pesto sauce
- 1 (2-ounce) jar roasted peppers
- 1/4 cup grated Parmesan cheese, plus 1 tablespoon
- 1/4 pound thickly-cut capicolla, coarsely chopped (Italian Cold Cut Salume)
- 1/2 cup (2 ounces) shredded mozzarella cheese
Shoofly Muffins

Preheat oven to 350 degrees F
- 2 cups all-purpose flour
- 1 1/2 cups packed light brown sugar
- 1/2 teaspoon cinnamon
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 5 tablespoons cold butter, cut into pieces
- 1 cup boiling water
- 1/2 cup molasses
- 2 tablespoons vegetable oil
- 1 teaspoon vanilla extract

- 1 (8 oz) block cream cheese, softened
- 1 cup butter, softened
- 2 1/2 cups flour
- 1 - 1 1/2 cups Nutella
- 1/4 cup water
Cheesy Chicken and Rice Crock Pot

- 6 chicken breasts (boneless & skinless)
- salt & pepper to taste
- garlic powder, to taste
- 2 cans cream of chicken soup
- 1 can cheddar cheese soup
LATINO-STYLE CHICKEN AND RICE ( ARROZ CON POLLO)

Adjust oven rack to middle position and heat oven to 350°F
- 6 medium garlic cloves
- 1 teaspoon salt
- 1⁄2 teaspoon dried oregano
- 1 2 distilled white vinegar, plus 2 additional teaspoons
- 1⁄2 teaspoon ground black pepper
- 8 1/2 to 4 skin-on (3 1/2 to 4 pounds)
- 2 tablespoons olive oil
- 1 1 onion, chopped fine (about 1 cup)
- 1 3/4 green bell pepper, stemmed, seeded, and chopped fine (about 3/4 cup)
- 1⁄4 teaspoon hot red pepper flakes
- 1⁄4 cup fresh cilantro leaves, minced
- 1 (8 ounce) can tomato sauce
- 1 3⁄4 cups low sodium chicken broth
- 1⁄4 cup water
- 3 cups medium grain rice (see note above)
- 1⁄2 cup green olives, pitted and halved (manzanilla)
- 1 tablespoon capers
- 1⁄2 1/4 2-inch cut into 1/4 by 2-inch strips

Cheese "Steak" Pizza #2

Preheat oven to 400 degrees F
- 1 pound ground beef
- 1 medium-sized onion, sliced into thin rings
- 1 small green or red bell pepper, cut into thin strips
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 (12-inch) prepared thick pizza shell
- 1/3 cup spaghetti or pizza sauce
- 2 cups (8 ounces) shredded mozzarella cheese

- Sweet Potato Filling:
- 2 large sweet potatoes
- 2/3 cup brown sugar, packed
- 1/2 cup granulated sugar
- 2 tablespoons all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/8 teaspoon ground allspice
- 1/8 teaspoon ground cloves
- 1/8 teaspoon ground ginger
- 2 tablespoons dark molasses
- 3 large eggs
- 1 cup whipping cream
- Cranberry-Pecan Streusel:
- 1/3 cup sweetened dried cranberries
- 1/3 cup hot water
- 1/4 cup all-purpose flour
- 1/4 cup firmly packed dark brown sugar
- 2 tablespoons butter, melted
- 3/4 cup pecans, coarsely chopped
- Crust:
- 1 Pillsbury® refrigerated pie crust, softened as directed on box
- 1 cup crushed gingersnaps (about 20)
- 1/2 cup pecans, coarsely ground
- 1/4 cup powdered sugar
- 2 tablespoons butter, melted
