Macadamia-Coconut Cookie

- One 17.5-ounce package sugar cookie mix
- 1 egg
- 1 stick butter, melted
- 3/4 cup flaked sweetened coconut
- 1/2 cup chopped macadamia nuts (recommended: Mauna Loa)
- 1/2 cups white chocolate chips, for drizzle
RUBY CHICKEN

Night before: Chop onions, thaw orange juice and chicken, measure spices
- 2 lb Chicken; pieces
- 1 md Onions; chopped
- 2 tb Oil
- 2 ts Salt
- 1 ts Pumpkin pie spice
- 1 can Orange juice, concentrated
- 2 ts Orange peel, grated
- 1 lb Cranberries
- 1 c Sugar
Golden Pecan Raisin Bars

Preheat oven to 350 degrees
- 1 1/4 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup (1 stick) butter, softened
- 2 eggs

- 3 cups sliced fresh strawberries

- 1 Pillsbury® refrigerated pie crust, softened as directed on box
- Filling:
- 1 can (15 oz) pumpkin (not pumpkin pie mix)
- 2 eggs
- 1/2 cup granulated sugar
- 1/2 cup packed light brown sugar
- 1 tablespoon ground cinnamon
- 1 teaspoon ground ginger
- 1/2 teaspoon ground mace
- 1/2 teaspoon ground cloves
- 1 cup heavy whipping cream
- Butterscotch Cream:
- 1 package (3 oz) cream cheese, softened
- 2 1/2 cups frozen (thawed) reduced-fat whipped topping
- 1/4 cup butterscotch instant pudding and pie filling mix
- Garnish:
- 1/2 cup heavy whipping cream
- 1 tablespoon white chocolate instant pudding and pie filling mix

Carrabba's Chicken Marsala

- 4 chicken breast, grilled
- 4 cups dry Marsala wine
- 2 cups butter
- 4 pinches salt
- 4 pinches black pepper
- 2 cups mushrooms, sauteed
Honey Sriracha Chicken Wings

Preheat oven to 200°F Fill a wide thick-bottomed pan with about 1 1/2" of oil
- 4 lbs. Chicken Wings, tips removed, rinsed, and patted dry
- 1 c unsalted Butter
- 2/3 c Sriracha (hot sauce)
- 1/2 c orange blossom Honey
- 2 t Sea Salt
- juice of 1 Lime
- chopped fresh cilantro for garnish
- sesame seeds for garnish
- flour for dredging chicken wings (@1/2 c)
- oil for deep frying, preferably grape seed or peanut oil
Honey Orange Chicken

1) Mix the orange and lemon peels with the garlic
- 2 tbsp fresh orange peel
- 1/2 cup honey
- 1 tsp fresh lemon peel
- 2 tbsp soy sauce
- 2 cloves garlic
- 1 tsp dry mustard
- 1 cup fresh orange juice
- 1/2 cup unsalted butter, melted
- 1/3 cup fresh lemon juice
- 2 broiler/fryer chickens (3 to 31/2 Ibs each), cut up

- 1 Cup Sugar
- 1 (8 oz.) tub whipped topping
- Third Layer:
- 1 large Can drained crushed pineapple

- 2 C. boiling water
- 1 1/4 C Cold water
