Slow Cooker Hawaiian Chicken

Place chicken in bottom of 4-quart slow cooker
- 2 pounds boneless, skinless chicken breasts (frozen is okay)
- 1 (15 oz) bottle sweet pineapple barbecue sauce (like King's Hawaiian Original Sweet Pineapple BBQ Sauce)
- 1 (20 oz.) canned pineapple, sliced or chunks, drained
- fresh cilantro (optional)
- hamburger buns (optional)
Spiced Gingerbread Cookies

In a large bowl, blend together shortening and sugar
- 3/4 c. shortening
- 1 c. sugar
- 1 egg, beaten
- 1/4 c. molasses
- 2 c. all-purpose flour
- 1 t. baking soda
- 1/2 t. salt
- 1 t. cinnamon
- 1 t. ground cloves
- 1 t. ground ginger
- Garnish: sugar
Italian Pork Roast

1. Rub pork with 1 teaspoon Italian seasoning and place in slow cooker bowl
- 1 boneless pork loin roast (about 3 pounds), trimmed and tied
- 3 teaspoons Italian seasoning
- 1 can (14.5 ounces) diced tomatoes with basil, oregano and garlic, drained
- 1/3 tablespoon low-sodium chicken broth
- 3/4 teaspoon salt
- 1/2 teaspoon black pepper
- 1 large green pepper, seeded and chopped
- 2 tablespoons cornstarch
- 1 1/2 teaspoons balsamic vinegar
Tomato and Beef

In a big frying pan, spray non-stick cooking oil
- 1 pound Beef, (use good cut of meat, like sirlon tips)
- 2 small Tomatoes, (1 pound)
- 2 cloves Garlic
- 1 Tbsp Chinese cooking wine
- 1 tsp Soy Sauce
- 1 tsp Oyster sauce
- 2 Tbsp Ketchup
- 1 tsp Sugar
- 1 Tbsp Cornstarch
- dash of Salt
- dash of White pepper
- 1 tsp Vinegar, (optional)

- 1 1/2 cups granulated sugar
- 1/2 cup salted butter, softened
- 4 oz. cream cheese
- 3 large eggs
- 1/2 tsp. salt
- 1 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1 tsp. baking soda
- 1 1/2 cups peach pie filling (15.5 oz can)
- 2 tbs. peach jam
- 3 1/2 cups AP flour
- 1 cup finely chopped pecans
Lemon Softies

Preheat oven to 375 degrees F
- 1 and 1/4 cups white (granulated) sugar
- 1 cup (2 sticks, 8 ounces, 1/2 pound) salted butter, softened
- 3 large eggs
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 1 and 1/2 cups lemon pie filling (I used Comstock -- my can was 15.5 ounces net weight, and it was exactly 1 and 1/2 cups)
- 1 Tablespoon lemon juice
- the zest of one lemon (that's only the yellow part of the lemon rind, finely grated)
- 3 and 1/4 cups all-purpose flour (pack it down in the cup when you measure it)
- 1 cup crushed corn flakes (it takes about 2 cups corn flakes to make 1 cup of crushed corn flakes)
- 30 red maraschino cherries OR 30 pecan or walnut halves to garnish your cookies
Sicilian Love Cake

Preheat the oven according to the cake mix directions
- 1 box chocolate cake mix, plus the ingredients called for in the directions
- Canola oil, for preparing the pan
- 28 ounces ricotta cheese (3 1/2 cups)
- 4 ounces mascarpone (1/2 cup)
- 3 large eggs
- 3/4 cup sugar
- 1/8 teaspoon kosher salt
- 10 ounces mascarpone (1 1/4 cups)
- 1 cup whole milk
- One 3.9-ounce box instant chocolate pudding mix
- 1 tablespoon sugar
New Fashioned Chicken Pot Pie

Preheat oven to 400 degrees
- 2 (15 ounce each) cans mixed vegetables, drained
- 2 (10 3/4 ounce each) cans condensed cream of potato soup
- 1 cup milk
- 1 (10 ounce) can chunk-white chicken, drained and flaked
- 1/2 teaspoon onion powder
- 1/4 teaspoon salt
- 1/2 teaspoon black pepper
- 1 (8 ounce) container refrigerated crescent rolls
