Baked Fish Packets with Dill

Preheat oven to 400°F, and lay out 4 large squares of parchment paper
- 4 (4-ounce) tilapia fillets
- Juice of 1/2 lemon
- 2 tablespoons butter, divided
- 2 teaspoons minced garlic, divided
- Salt and pepper
- 4 sprigs fresh dill

- 1 Heat closed contact grill 5 minutes. In shallow nonmetal dish, mix taco seasoning mix, lime juice, chipotle chiles and honey. Add beef, bell pepper and onion; toss to coat.
- 2 When grill is heated, place beef and vegetables on bottom grill surface. Close grill; cook 4 to 6 minutes, turning mixture occasionally, until beef is desired doneness and vegetables are crisp-tender.
- 3 Spoon beef and vegetables evenly down center of each warm tortilla. Top with guacamole, sour cream, shredded lettuce and/or chopped tomatoes. Roll up each tortilla around filling.

- 3 to 4 pounds pork ribs
- 1/2 cup Kikkoman soy sauce
- 1/2 cup plum jam
- 1/2 cup honey
- 1/4 cup orange juice
- 1 clove garlic...minced
Million Dollar Pound Cake

Preheat oven to 300 degrees F
- Orange Glaze:
- 1 pound butter, softened
- 3 cups sugar
- 6 eggs
- 4 cups all-purpose flour
- 3/4 cup milk
- 1 teaspoon almond extract
- 1 teaspoon vanilla extract
- 1 1/2 cups confectioners' sugar
- 2 tablespoons orange juice
Cranberry-Glazed Pork Chops

Heat oil in large skillet over medium-high heat
- 2 tablespoons Canola Oil
- 6 boneless pork chops (6 chops = 1-3/4 lbs)
- 1/4 teaspoon salt
- 1 can (14 oz each) whole berry cranberry sauce
- 1/2 cup apple jelly
- 1 tablespoon Spicy Brown Mustard
- 1/2 teaspoon dried thyme leaves
- 1 tablespoon cornstarch
Autumn Apple Pork Chop Skillet

1. Pat the pork chops dry with paper towels and evenly sprinkle with the sage, salt, and pepper
- 4 (5-ounce) thin cut boneless pork chops
- 1 teaspoon dried sage leaves (thyme can be substituted if you don’t have sage)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 medium apples, peeled, cored, and each cut into 8 wedges
- 2 teaspoons butter
- 2 tablespoons minced shallot (or finely chopped onion)
- 1 cup regular or light apple juice
- 1 tablespoon all-purpose flour
- 1 teaspoon Dijon mustard

Combine yams, pineapple and apple in a greased 13"x9" baking dish
- 2 pounds yams, peeled and thickly sliced
- 1 c. pineapple tidbits, juice reserved
- 1 apple, cored and chopped
- 1/2 c. Raisins
- 1 T. butter
- 1 c. onion, thinly sliced
- 3/4 c. pineapple juice
- 2 T. brown sugar, packed
- 1/2 t. salt
BEEF STROGANOFF CASSEROLE

In crock pot add meat cubes, salt and pepper, and then uncooked noodles on top of meat
- 2 lbs Chuck Roast,cubed in 2-3" cubes
- 6 oz Uncooked Wide Egg Noodles
- 16 oz can Condensed Mushroom Soup
- 8 oz can Beef Broth, plus 1 can filled with warm water
- 4 oz Sour Cream
- 1 tsp Salt, pepper to taste
Mixed-Berry Cream Tart

1 In small bowl, crush 1 cup of the strawberries with pastry blender or fork
- 2 cups sliced fresh strawberries
- 1/2 cup boiling water
- 1 box (4-serving size) sugar-free strawberry-flavored gelatin
- 3 pouches (1.5 oz each) roasted almond crunchy granola bars (from 8.9-oz box)
- 1 package (8 oz) fat-free cream cheese
- 1/4 cup sugar
- 1/4 teaspoon almond extract
- 1 cup fresh blueberries
- 1 cup fresh raspberries
- Fat-free whipped topping, if desired

- 1 (10-ounce) package frozen corn

- 1 tablespoon dried basil
- 1 teaspoon white pepper
- 1 teaspoon onion powder
- 1 teaspoon salt
- 2 cups instant mashed potato buds or flakes
