Oven Baked BBQ Beef Ribs

Rinse ribs and dry COMPLETELY with paper towels
- 3 lbs meaty beef ribs
- Liquid smoke (optional)
- 2-4 tablespoon olive oil
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 tablespoon cajun seasoning
- 2 tablespoon brown sugar, packed
- 1 teaspoon chili powder
- 1 teaspoon salt, can used a smoked salt as well
- 1 teaspoon paprika
- 2 teaspoons oregano
- Favorite BBQ Sauce (I only used a few tablespoons of Sweet Baby Ray's)
Delicious Pot Roast

Cut small slits in the top of roast; insert a slice of garlic into each slit
- 4-lb. boneless beef chuck roast
- 2 cloves garlic, sliced
- 1/2 t. salt
- 1/2 t. pepper
- 1/4 c. all-purpose flour
- 1/3 c. olive oil
- 1 onion, sliced
- 1 c. red wine or beef broth
- 8-oz. can tomato sauce
- 1 T. brown sugar, packed
- 1 t. dried oregano
- 1 t. prepared horseradish
- 1 t. mustard
- 1 bay leaf
- 8 new red potatoes
- 6 carrots, peeled and quartered
- 4 stalks celery, sliced
Nutella Raspberry Dip

1. Mix the cream cheese and Nutella together
- 1 package (8 ounces) cream cheese, softened
- 1/4 cup Nutella
- 1/4 cup powdered sugar
- 1/2 cup raspberries, crushed
- 1 container (8 ounces) of Cool Whip
STUFFED FLOUNDER

Beat the egg briskly and add to the cooked, flaked crab, along with each remaining ingredient (except the fish)
- 1 egg
- 6 oz frozen crab meat
- 1 cup finely crushed
- Ritz crackers
- Grated rind of 2 lemons
- 1/4 cup finely minced celery
- 1/4 cup mayonnaise
- 2 TB grated Parmesan
- 1/4 tsp garlic salt
- Black pepper to taste
- 2 flounders each split lengthwise & boned & cleaned, heads & tails removed
- Butter, melted
- Paprika
Double Chocolate Espresso Zucchini Bread

Heat oven to 350 degrees F
- 2 eggs
- 1/2 C brown sugar
- 1/3 C honey
- 1/2 C veggie or olive oil
- 1 t vanilla
- 1/2 t baking soda
- 1/2 t baking powder
- 1 t salt
- 1 packet Folgers Silk instant coffee (or 1 t instant espresso)
- 1/3 C cocoa powder
- 1 t ground cinnamon
- 1 2/3 C flour
- 2 C shredded zucchini
- 1 C chocolate chips
Frittata

Preheat the oven to 450 degrees F
- Olive oil, for drizzling
- 8 mushrooms, quartered
- 6 spears asparagus, chopped
- Salt and freshly ground black pepper
- 12 large eggs
- 1/2 cup grated Monterey Jack
- 1/4 cup grated Parmesan
- 2 dashes hot sauce
- 2 tablespoons butter
- 1 medium onion, halved and sliced thin
- 1 cold baked potato, diced
- 1/4 cup chopped green olives with pimentos
- 2 jarred roasted red peppers, sliced thin
- 8 fresh basil leaves, chopped
Potato Chip Cookies #2

Mix butter and sugar until creamed together
- 1 pound Butter
- 1 cup Sugar
- 3 cup Flour
- 2 teaspoon vanilla
- 1 1/2 cup coarsely crushed potato chips
Pollo En Vino Dulce (Chicken in Sweet Wine)

Wash and dry chicken. Mash next 4 ingredients together and rub chicken well inside and out with mixture

- 3 bay leaves 10 prunes, pitted
- 2 tablespoons seeded raisins
- 8 medium potatoes, peeled and cut into pieces
- 1 1/2 cups muscatel wine
- 1/2 cup sugar
Mozzarella-Stuffed Mushroom Pizza Burgers

1 In large bowl, mix beef, Italian seasoning, salt and pepper
- 1 1/2 lb lean (at least 80%) ground beef
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 cup shredded mozzarella cheese (4 oz)
- 1 tablespoon olive oil or vegetable oil
- 1 package (8 oz) sliced fresh mushrooms (about 3 cups)
- 1 clove garlic, finely chopped
- 4 hamburger buns, split
- 1/2 cup pizza sauce, warmed
CRAZE'S SPAGHETTI

Put it all in the crock-pot and cook on low for at least 6-8 hours
- 1 small zucchini (sliced down the middle and then each half was sliced into 1/4" slices)
- 1 yellow squash (sliced the same as zucchini) if you don't have a yellow squash, use 2 zucchinis
- 1 green bell pepper (diced)
- 1 clove garlic (peeled & diced as small as you can) You HAVE to use fresh, not jarred!
- 1 large sweet onion (diced)
- 1-15 oz. can tomato sauce
- 2-15 oz. cans of diced tomatoes
- Fresh mushrooms (I used 5 large, chopped)
- 2 tsp. Italian Seasoning (I used McCormick's Perfect Pinch Italian)
- 2 tsp. oregano
- 1 lb. hamburger (browned and drained)
- 1 T. olive oil
- Sugar to taste (I used 1 tsp. sugar substitute)
