- 3 to 4 drops yellow food coloring, optional
- 2 cups (12 ounces) white baking chips or semisweet chocolate chips

Slow Cooker Pork Carnitas Nachos

1 Spray 5- to 6-quart slow cooker with cooking spray
- 1 medium onion, sliced
- 2 tablespoons chopped chipotle chiles in adobo sauce (from 7-oz can) or 2 jalapeño chiles, seeded, sliced

- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1 cup vegetable oil
- 1 cup applesauce
- 1 teaspoon vanilla
- 4 eggs
- 1 container (1 lb) Betty Crocker® Rich & Creamy dulce de leche or cream cheese frosting
- 1/4 cup Betty Crocker® Rich & Creamy vanilla frosting (from 1-lb container)
- 24 brown candy-coated peanut butter candies (from 12.7-oz bag of multicolored candies)
- 24 brown miniature candy-coated chocolate baking bits (from 12-oz bag of multicolored baking bits)

Pumpkin Pie from Scratch

1. To make crust, heat oven to 350 degrees
- For pumpkin puree:
- 3 tablespoons granulated sugar
- 6 ounces graham crackers, broken, or more as needed
- 5 tablespoons butter, melted, or more as needed
- 2 eggs
- 1/2 cup sugar
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground ginger
- 1/8 teaspoon freshly grated nutmeg
- 1/8 teaspoon ground cloves
- Pinch salt
- 1 1/2 cups fresh (or canned) pumpkin puree (unsweetened and unspiced)
- 1 1/4 cups half-and-half, cream or milk
- 1 medium sugar pumpkin
Chinese Spaghetti Bolognese

Bring a pot of salted water to a boil for the spaghetti
- 8 oz. dried spaghetti
- Salt
- 1 tablespoon oil
- 12 oz. ground beef
- 1 medium onion, finely diced
- 2 cloves garlic, minced
- 2 teaspoons Shaoxing wine or dry sherry
- 2 cups chicken stock
- 3 tablespoons oyster sauce
- 2 tablespoons light soy sauce
- 1/2 teaspoon dark soy sauce
- 1 teaspoon sesame oil
- 1/8 teaspoon white pepper
- 1 cup frozen peas
- 2 tablespoons cornstarch, mixed with 2 tablespoons water
Cream of Chicken Macaroni and Cheddar

Cook macaroni elbows according to package directions
- 1 Box of macaroni elbows (1 pound package)
- 1 can of peas (15 oz.) drained.
- 1 can of Campbell’s cream of chicken soup (10 3/4 oz.)
- 1/2 cup of milk
- 1/2 block sharp cheddar cheese (1/2 block is 4 oz.).
Pumpkin Cheesecake with Caramel Sauce

1 Heat oven to 300°F. Spray 9-inch springform pan with cooking spray
- 2 cups crushed teddy bear-shaped cinnamon graham snacks (from 10-oz box)
- 1/4 cup butter or margarine, melted
- 4 packages (8 oz each) cream cheese, softened
- 1 1/2 cups granulated sugar
- 4 eggs
- 1 cup canned pumpkin (not pumpkin pie mix)
- 2 teaspoons pumpkin pie spice
- 3/4 teaspoon ground cardamom
- 1/3 cup packed brown sugar
- 1/3 cup light or dark corn syrup
- 2 tablespoons butter or margarine
- 1/3 cup whipping cream
- 1 tablespoon spiced rum or 1/4 teaspoon rum extract
- Sweetened whipped cream, if desired
