Grilled Cube Steak Sandwich

Place cube steak in shallow casserole dish
- 1 1/2 pounds cube steak
- Approximately 3/4 cup zesty Italian vinaigrette dressing
- 1 red bell pepper, julienne
- 1 orange bell pepper, julienne
- 1 yellow bell pepper, julienne
- 1 medium sweet Vidalia onion, julienne
- Kosher salt
- sliced sourdough bread
- butter
- banana peppers (optional)
BLT Chicken Salad

Combine first 5 ingredients in a small bowl; stir well
- 1/2 cup mayonnaise
- 1/4 cup barbecue sauce
- 2 tablespoons grated onion
- 1 tablespoon lemon juice
- 1/2 teaspoon black pepper
- 2 large tomatoes, chopped
- 8 cups torn leaf lettuce or iceberg lettuce
- 2 hard-cooked eggs, sliced
- 3 cups chopped cooked chicken
- 10 slices bacon, cooked and crumbled
Chicken Continental Rice Seasoning Mix

Combine all ingredients in a large bowl
- CHICKEN CONTINENTAL RICE:
- 2 tablespoons instant chicken- bouillon granules
- 1 tablespoon dried parsley leaves, crushed
- 2 teaspoons minced dried onions
- 1/4 teaspoon dried basil leaves
- 1/4 teaspoon thyme
- 1/8 teaspoon white pepper
- 1/8 teaspoon garlic powder
- 1 pkg. CHICKEN CONTINENTAL RICE SEASONING MIX, above
- 2 cups cold water
- 1 cup long-grain white rice
- 1 tablespoon butter or margarine, if desired
Carrot Raisin Breakfast Cookies

Preheat oven to 350 degrees
- 1½ cups whole-wheat flour
- 1½ teaspoons baking soda

- 1½ teaspoons cinnamon
- ½ teaspoon salt
- ½ cup butter, softened
- 1 banana, mashed
- ¼ cup real maple syrup
- 2 eggs
- 1½ teaspoons vanilla extract
- 3 cups rolled oats
- 2 cups grated carrots
- 1 cup raisins
- ½ cup of walnuts, chopped (optional)
Mice Cupcakes

Prepare cake batter and bake according to package directions for cupcakes, using foil- or paper-lined muffin tins
- 1 package chocolate cake mix (regular size)
- 2 cans (16 ounces each) vanilla frosting
- 48 vanilla wafers
- Red Hots, red gumdrops and red shoestring licorice
BEEF SUPREME

Brown ground beef in drippings and pour off excess fat
- 1 pounds ground beef
- Salt, pepper and onion to taste
- 12 ounces tomato sauce
- 4 ounces medium wide noodles
- 1 (3 ounce) packages cream cheese
- 3/4 cup cottage cheese
- 3 tablespoons sour cream and chives
- 1 tablespoons chopped green pepper
Cheesy Chicken and Rice Casserole

Preheat oven to 400 degrees
- 1 cup brown rice, uncooked
- 1 lb cooked skinless boneless chicken breasts, diced
- 2 cups fat free chicken broth
- 1-2 cubes chicken bouillon
- 16 oz frozen broccoli
- 8 oz frozen mixed vegetables
- 1 cup reduced fat cheddar cheese, shredded
- 1 1/2 cups fat free sour cream
- 1 cup fat free milk
- 2 tbsp whole wheat flour
- 1 tbsp light butter (I used Brummel & Brown)
- 2 tsp onion powder
- 1 tsp paprika
- Salt and pepper to taste
Mini Pumpkin Pie Pancake Muffins

1 Heat oven to 350°F. Spray 16 mini muffin cups with cooking spray
- 1 cup Original Bisquick® mix
- 1/4 cup sugar
- 1 teaspoon pumpkin pie spice
- 1 egg, beaten
- 1/4 cup milk
- 1/4 cup canned pumpkin (not pumpkin pie mix)
- 1/4 cup semisweet chocolate chips
