Chocolate-Peanut Butter Truffles

MICROWAVE chocolate in large microwaveable bowl on HIGH 2 min
- 1 pkg. (8 squares) BAKER'S Semi-Sweet Chocolate
- 1/2 cup peanut butter
- 1 tub (8 oz.) COOL WHIP Whipped Topping, thawed
- 1/4 cup powdered sugar
No Fail Sugar Cookie

Cream butter and sugar until light and fluffy
- 6 cups flour
- 3 tsp. baking powder
- 2 cups unsalted butter
- 2 cups sugar (white granulated)
- 2 eggs
- 2 tsp. almond extract or desired flavoring
- 1 tsp. salt
Filled French Toast Roll-Ups

Trim the crust from the bread and flatten each slice out with a rolling pin
- 8 slices soft white sandwich bread
- 3 tablespoons filling (such as nutella, peanut butter, jam, apple pie)
- 2 eggs
- 3 tablespoons milk
- 1/3 cup granulated sugar
- 1 heaping teaspoon ground cinnamon
- 2 tablespoons unsalted butter, for greasing the pan
- maple syrup, for serving (optional)
Watermelon Almond Tart

In a nonstick skillet, toast almonds over medium heat until golden, stirring constantly to prevent burning
- 1 cup sliced almonds
- 1 (3- to 5-inch-thick) slice seedless watermelon (from a whole watermelon), rind removed
- 1 cup low-fat or nonfat vanilla yogurt
- 1 cup blueberries
- 1 cup sliced strawberries
- 1 tablespoon chocolate flavor syrup
Stuffing Meatloaf

Preheat oven to 350. In large mixing bowl, crush stuffing using potato masher
- 2 cups stuffing ($.75)
- 2 lbs. ground chuck ($3.55)
- 2 eggs ($.20)
- 1 Tbsp balsamic vinegar ($.05)
- 1 tsp Italian seasoning ($.05)
- 1 tsp salt
- Couple dashes of pepper

Latino Style Chicken Skillet *(GOOD)*

Season chicken with 1 tablespoon of chili powder, 1 teaspoon of cumin, and adobo
- 12 boneless chicken thighs
- 3 tablespoons chili powder
- 3 garlic cloves, minced
- salt and pepper to taste or 2 tsp. Homemade Adobo
- 1 packet chicken bouillon or chicken broth
- 1 teaspoon oregano
- 2 teaspoon cumin, ground
- 1 large green bell pepper, chopped
- 1 large onion, chopped
- 3 pickled jalapeno peppers, sliced
- 1 (28) ounce can fire roasted diced tomato
- 1 zucchini, cut in chunks
- 2 chipotles peppers in adobo, chopped(optional)
- 1 cup cilantro, chopped
Parmesan-Crumbed Chicken

A simple Parmesan and breadcrumb mixture gives these breasts a crunchy coating and keeps them moist inside
- 6 boneless, skinless chicken breast halves (about 6 ounces each)
- 6 tablespoons Dijon-style mustard

- 5 ribs celery, trimmed and sliced thin
- 2 large leeks, trimmed, washed well, light green
- and white parts only, sliced thin
- 1/2 cup uncooked rice
