Beef Chow Fun

Cut beef into thin slices, put into a bowl
- Marinade sauce:
- 1/2 pound beef
- 1 pound wide rice noodle (ho fen)
- 1 small bunch of Chinese chive or scallion; cut into sections around 10cm long
- 1 small bunch of bean sprouts
- 1/4 middle size white onion, shredded
- 1 teaspoon light soy sauce
- 1/2 teaspoon salt
- 1 tablespoon oyster sauce
- 1 teaspoon sesame oil
- 1 tablespoon starch
- Stir fry sauce:
- 1/2 tablespoon light soy sauce
- 1 teaspoon dark soy sauce
- 1 tablespoon vegetable oil
- 1/2 teaspoon sugar
Yummy Pumpkin Pie *(GOOD)*

In mixer, combine and mix ingredients in order given (except pie shell)
- 2 cups canned pumpkin
- 2 tablespoons butter
- 1 teaspoon ginger
- 1 teaspoon cinnamon
- 3/4 teaspoon allspice
- 1/2 teaspoon vanilla
- 2 eggs
- 1/2 cup brown sugar
- 1 teaspoon molasses
- 1/2 cup sugar
- 3 tablespoons flour
- 1/4 teaspoon salt
- 1 cup half and half
- 1 (9 inch) unbaked pie shell

- Basic Cookie Dough
- 1/2 cup(s) dried cranberries, finely chopped
- 1/4 cup(s) crystallized ginger, finely chopped
- 2 teaspoon(s) grated fresh orange peel
- 1 teaspoon(s) pumpkin pie spice
- 3 tablespoon(s) green sugar crystals
- 3 tablespoon(s) red sugar crystals
Chocolate Rollups

Preheat oven to 350 degrees
- 1/2 cup (3 ounces) semisweet chocolate chips
- 1 tablespoon vegetable shortening
- 1 teaspoon almond extract
- 1 (8-ounce) package refrigerated crescent dinner rolls
- 2 tablespoons sliced almonds
- Confectioners' sugar for sprinkling
Pimiento & Cheese Deviled Eggs

Cut eggs in half lengthwise
- 6 hard-cooked eggs
- 1/4 cup finely shredded sharp cheddar cheese
- 2 tablespoons mayonnaise
- 4 teaspoons diced pimientos, divided
- 2 teaspoons Dijon mustard
- 2 teaspoons finely chopped sweet onion
- 1 small garlic clove, minced
- Dash each salt and pepper

In medium saucepan over high heat, combine sugar, water and butter and bring to boil
- 1/2 cup brown sugar
- 1/4 cup water
- 1 tablespoon butter
- 2 tablespoons corn syrup
- 3/4 cup peanut butter
- 1/2 cup marshmallow creme
- 1/2 teaspoon vanilla extract
Prosciutto-Stuffed Chicken with Mushroom Sauce

- 4 skinless, boneless chicken breasts (about 2 pounds)
- Kosher salt, freshly ground pepper
- 8 thin slices prosciutto
- 8 thin slices provolone cheese
- 32 fresh basil leaves
- 3 tablespoons unsalted butter, divided
- 1 tablespoon vegetable oil
- 4 cups mixed mushrooms (such as crimini, chanterelle, and maitake), torn or chopped into small pieces
- 2 cups low-sodium chicken broth
- 1 teaspoon red wine vinegar
- 2 tablespoons mixed chopped fresh herbs (such as basil, parsley, and chives)
Beer Cheese Soup

Heat a large stock pot over medium heat and add chopped bacon
- 3 slices thick-cut bacon, chopped
- 1 sweet onion, finely diced
- 1/2 red pepper, finely diced
- 2 garlic cloves, minced
- 2 tablespoons unsalted butter
- 2 tablespoons flour
- 2 cups of your favorite beer (I find that lighter wheat beers work best)
- 1 cup half and half
- 4 ounces sharp white cheddar, freshly grated
- 4 ounces extra sharp yellow cheddar, freshly grated
- 4 ounces colby jack, freshly grated
- fresh herbs (I like cilantro) for garnish
- salt and pepper to season if needed
Chocolate Chip Cookie Pie

Cream together eggs, sugar, brown sugar and butter; add flour, mixing well
- 2 eggs
- 1/2 c. sugar
- 1/2 c. brown sugar, packed
- 3/4 c. butter, softened
- 1/2 c. all-purpose flour
- 1 c. chocolate chips
- Optional: 1 c. chopped walnuts
- 9-inch pie crust
All-American Apple Pie Cupcakes

- 1 18.25-ounce box yellow cake mix
- 1/4 cup water
- 1 egg
- 2 tablespoons prepared pumpkin pie spice mix
- 1 15-ounce can apple pie filling
- 1 12-ounce tub cream cheese frosting
