Low Fat Strawberry Cheesecake

Preheat oven to 350 degrees
- 1 (16 ounce) container 1% low-fat cottage cheese
- 3/4 cup egg substitute
- 4 ounces reduced-fat cream cheese, softened
- 1/3 cup plus 1 tablespoon sugar, divided
- 1 teaspoon vanilla extract
- 1/2 cup low-fat vanilla yogurt
- 1/8 teaspoon lemon juice
- 1 pint fresh strawberries, sliced
Sour Cream and Roasted Red Pepper Dip

In a blender, combine roasted peppers, sour cream, basil and garlic powder; puree until smooth
- 15 oz roasted red peppers (packed in water), packed in water, drained (about 2 cups)

- 1/2 cup(s) basil, fresh
- 1/2 tsp garlic powder
- 1/2 tsp table salt, or to taste
- 1/4 tsp black pepper, freshly ground, or to taste

Impossibly Easy Chicken Taco Pie

1 Heat oven to 400ºF. Grease bottom and side of glass pie plate, 9x1 1/4 inches
- 2 cups cut-up cooked chicken
- 1/2 cup chopped onion
- 2 tablespoons taco seasoning mix (from 1-ounce package)
- 1 cup Original Bisquick® mix
- 1 cup milk
- 2 eggs
- 1 cup shredded Cheddar cheese (4 ounces)
Slow Cooker Cajun-Seasoned Chicken

1 In 10-inch nonstick skillet, cook bacon over medium-high heat until crisp
- 3 slices bacon, cut up
- 1/2 cup chopped green bell pepper
- 1/4 cup chopped onion
- 1/4 cup chopped celery
- 1 1/4 lb boneless skinless chicken thighs
- 2 teaspoons Cajun seasoning
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 1/3 cups uncooked regular long-grain white rice

- 1 1/2 pounds ground beef

- 2 tablespoons Worcestershire sauce
