Root Beer (or Cola) Chocolate Cake with Chocolate Butter Frosting

Preheat the oven to 350 degrees
- 3/4 cup shortening
- 1 3/4 cups granulated sugar
- 2 large eggs
- 1/2 tablespoon root beer flavor
- 2 2/3 cups all-purpose flour
- 1/4 cup cocoa powder
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 1/2 cup buttermilk
- 1 12-ounce can root beer, not sugar-free
Sunday Beef Roast

Marinate the chuck roast in the lemon juice, sprinkled with lemon pepper and a bit of salt and pepper
- 1 1.5 lb. chuck roast ($3.73)

- 3 Tbsp lemon juice ($.05)
- Salt and pepper
- 4 medium red potatoes, washed and quartered ($.80)
- 4 carrots, peeled and quartered ($.40)
- 3 celery stalks, cut into 2 inch pieces ($.30)
- 1/2 yellow onion, diced ($.15)
- 2 cups hot water
"Deep-Fried" Ice Cream

Combine cereal and chocolate chips in a bowl; set aside
- 4 c. bite-size crispy cinnamon rice cereal squares, lightly crushed
- 1 c. mini semi-sweet chocolate chips
- 2 pts. vanilla ice cream
- 1/2 lb. fresh strawberries, hulled and sliced
- Garnish: honey, whipped cream
HONEY GARLIC BUTTER SALMON IN FOIL

Position a rack in the middle of the oven
- 1/4 cup butter
- 1/3 cup honey
- 4 large cloves garlic, crushed
- 2 tablespoons fresh lemon juice (juice of 1/2 a lemon)
- 1 (2 1/2 pound) side of salmon
- Sea salt, to taste
- Cracked pepper, to taste (optional)
- Lemon slices (to serve)
Potato-Clam Chowder

1. Heat water, Potatoes and salt to boiling in 3-quart saucepan
- 4 cups hot water
- 1 package au gratin potatoes (4.9 ounces)
- 1/2 teaspoon salt, if desired
- 1 cup frozen corn
- 1 cup frozen broccoli florets
- 2 1/2 cups milk
- 1 small onion, chopped (1/4 cup)
- 2 cans minced clams, undrained (6 1/2 ounces each)
Sweet Sloppy Joes

Cook first 3 ingredients in a large skillet, stirring until beef crumbles and is no longer pink; drain
- 1 1/2 pounds ground beef
- 1 small onion, chopped
- 1 small green bell pepper, seeded and chopped
- 1 (10-3/4-ounce) can tomato soup, undiluted
- 1 (8-ounce) can tomato sauce
- 1 cup ketchup
- 2 tablespoons brown sugar (see Note)
- 1 tablespoon Worcestershire sauce
- 1 teaspoon prepared mustard
- 1/8 teaspoon garlic powder
- 4 sesame seed hamburger buns, toasted

Graham Cracker Crust: Preheat oven to 350 degrees
- Crust:
- 1 package graham crackers (1/3 box)
- 5 tablespoons melted butter
- 1/3 cup sugar
- Filling:
- 3 egg yolks
- Grated zest of 2 limes (about 1 1/2 teaspoons)
- 1 (14 ounce) can sweetened condensed milk
- 2/3 cup freshly squeezed lime juice (Key lime is best)
- Topping:
- 1 cup heavy cream or whipping cream chilled
- 3 tablespoons confectioners' sugar
Puerto Rican Style Chicken Stew

Dice ham into 1/2" pieces
- 3/4 lb smoked ham
- 3/4 lb boneless, skinless chicken
- 2 t vegetable oil, divided
- 1 can (48 oz) chicken broth
- 1 can tomato sauce
- 1 1/2 c prepared sofrito
- 1/2 c chopped fresh cilantro
- 2 T chopped fresh oregano
- 1 can (15 oz) pigeon peas, drained
- 1 cup cooked white rice
- 2 medium avocados
- Hot Sauce
Honey-of-a-Meal Chicken Recipe

In a pressure cooker, brown chicken breasts in oil in batches
- 4 bone-in chicken breast halves, skin removed (8 ounces each)
- 2 tablespoons olive oil
- 1 medium onion, finely chopped
- 1 cup chicken broth
- 2 tablespoons spicy brown mustard
- 1/2 teaspoon pepper
- 2 tablespoons honey
