Cupid's Chocolate Cake

Preheat oven to 350 degrees
- 1 (18.25-ounce) package chocolate cake mix, prepared according to package directions
- 1 (8-ounce) package cream cheese, softened
- 1/2 cup confectioners' sugar
- 1/2 cup seedless strawberry jam
- 2 drops red food color
- 1 (8-ounce) container frozen whipped topping, thawed
- 1 cup chocolate chips
- 1 teaspoon vegetable shortening
- 20 large strawberries
Cajun Beef Burgers

In small bowl, combine first 10 ingredients until blended; chill until serving
- BURGERS:
- 1/4 cup mayonnaise
- 1 green onion, thinly sliced
- 1-1/2 teaspoons Creole mustard
- 1/2 teaspoon minced garlic
- 1/2 teaspoon grated lime peel
- 1/2 teaspoon lime juice
- 1/4 teaspoon pepper
- 1/8 teaspoon salt
- Dash hot pepper sauce
- Dash Worcestershire sauce
- 1/4 cup each finely chopped onion, celery and carrot
- 2 tablespoons minced fresh parsley
- 1 tablespoon butter
- 1 tablespoon Cajun seasoning
- 1/4 teaspoon salt
- 1/4 teaspoon hot pepper sauce
- 1 pound lean ground beef (90% lean)
- 4 onion rolls, split

Heat oven to 400ºF. Season the chicken with salt and pepper
- 1 1/2 pounds (4 pieces) boneless, skinless chicken breast, about 6 ounces each
- Salt and pepper
- 2 tablespoons olive oil, divided
- 2 tablespoons butter
- 1 large clove garlic, crushed
- 1 tablespoon chopped fresh thyme
- 4 slices smoked or fresh mozzarella, 1/2-inch thick
- 8 slices speck or prosciutto di Parma
- 8 slices vine-ripe tomato
- 1/2 cup freshly grated Parmigiano-Reggiano cheese
- A few leaves of basil, torn

- 1 package (1 oz) fajita seasoning mix
- 1 large red bell pepper, cut into thin strips
- 1 large green bell pepper, cut into thin strips
