Korean Style Hamburger Patties

In a large non-stick fry pan heat 1 – 2 tablespoons of canola oil over medium high heat
- 1 pound ground beef (I use lean ground sirloin)
- 1 tablespoon finely chopped onion
- 3 tablespoons finely chopped green onion
- 1 clove garlic, minced
- 1/2 cup finely chopped water chestnuts
- 4 tablespoons soy sauce
- 1 teaspoon sesame oil
- 1 heaping teaspoon sugar
- 1 whole egg
Omelets with Caramelized Onions and Bacon Crumbles

Place the onion slices in a skillet over low heat with the olive oil and sugar
- 2 white onions, sliced ($.40)
- 1 Tbsp olive oil ($.03)
- 1 Tbsp sugar ($.01)
- 12 eggs, or 3 eggs per omelet ($1.19)
- 1/2 cup milk ($.05)
- Oil for the omelet pan ($.10)
- 4 slices bacon, cooked and crumbled ($.20)
- 1 red pepper, seeded and diced ($1)
- Feta cheese, about 4 ounces ($1) Coupon for Atheno’s Feta cheese
- Salt and pepper to taste
- Fresh fruit as side dish, we had cantaloupe wedges ($.75)

- 1 package JELL-O Brand Gelatin, any flavor
- 3/4 cup boiling water
- 1/2 cup cold water
- Ice cubes
- 1 pint ice cream, any flavor
- 1 cup thawed COOL WHIP Whipped Topping
- 1/4 cup chopped nuts
Raspberry Streusel Jumbo Muffins

Preheat oven to 375°. Spray pan cavities with vegetable pan spray
- Topping:
- 1/2 cup (1 stick) butter, softened
- 1 cup granulated sugar
- 2 eggs
- 1 teaspoon pure vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup milk
- 12 ounces fresh or frozen raspberries
- 1/2 cup all-purpose flour
- 1/4 cup firmly packed brown sugar
- 3 tablespoons butter or margarine, melted
Tomato Pesto Dressing

Combine TPC Tomato Pesto seasoning and milk
- 3/4 cup salad dressing or mayonnaise
- 1/2 cup 2% milk
- 3/4 cup Sour Cream
- 1 pkg The Pantry Club Tomato Pesto seasoning
Loaded Baked Potato Salad

Boil the potatoes in water until just fork tender, about 15-20 minutes, drain and let cool completely
- 2 pounds potatoes, diced (optionally peeled)
- 1 cup sour cream (or Greek yogurt)
- 1/2 cup cheddar cheese, shredded
- 6 green onions, sliced
- 6 strips bacon, cut into 1 inch pieces
- 1 tablespoon lemon juice (~1/2 small lemon) (optional)
- salt and pepper to taste
Creamy Peppery Potatoes

Place potatoes in large pot, add enough water to cover, and bring to a boil
- 2 pounds (4 to 5 large) potatoes, peeled and cut into large chunks
- 1/4 cup bottled peppercorn ranch salad dressing or pepper Parmesan salad dressing
- 2 tablespoons butter or margarine
- 1/2 teaspoon salt
- 1/8 teaspoon pepper

- 1.5 lbs. chicken breasts

- 1 lime, juiced (about 2 tbsp.)

- 10 avocado slices (from 1 avocado)
- 10 tomato slices (from 2 medium tomatoes)
