Chocolate Strawberry Icebox Cake

1. Place the jam in a small microwave-safe bowl and microwave on high power for 15 seconds, or until mostly melted
- 6 6 6 tablespoons no-sugar-added strawberry jam
- 9 9 9 full chocolate graham crackers (18 squares)
- 1 8-ounce 1 8-ounce 8-ounce container (3 cups) light whipped topping, divided
- 1 1 1 pound fresh strawberries, thickly sliced
- 2 2 2 tablespoons cocoa powder (preferably Dutch-processed, like Hersheys Special Dark)
Braised Pork Chops

Cook pork chops over medium heat until brown; drain
- 4 pork loin or rib chops, about 1/2 inch thick
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 cup pineapple juice, apple juice or water

Nacho Casserole

Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray
- 2 lb lean (at least 80%) ground beef
- 1 cup water
- 2 envelopes (1 oz each) taco seasoning
- 1 can (4.5 oz) green chilies
- 2 cans (16 oz each) refried beans
- 2 cups shredded Cheddar cheese (8 oz)
- 1 cup chopped tomato (1 large)
- 1/2 cup chopped green onions (8 medium)
- 1 can (2.5 oz) sliced ripe olives, drained
- 1 bag (12 oz) gold tortilla chips (extra thick)

Crumb Boss Mississippi Mud Cake

Grease mini bundt pan. Melt butter and chocolate
- 3 oz Semi Sweet Baking Chocolate
- 5 oz Butter
- 1 c Hot Water
- 2 tsp Instant Coffee Granules
- 2 T Bourbon
- 2 tsp Vanilla X
- 1 1/4 c AP Flour
- 1 tsp baking Soda
- 1 c Sugar
- pinch Salt
- 2 lg Eggs
Baked Pesto Salmon

Preheat the oven to 425°F (220°C)
- 2 salmon fillets (4–6 oz/125–175g each), about 1" (2.5cm) thick
- 2 small yellow summer squash or zucchini, cut into 1" (2.5 cm) slices
- 1 small red onion, cut into 1" (2.5 cm) wedges
- 1 tbsp olive oil
- 1 garlic clove, pressed
- 1/4 tsp salt
- 1/8 tsp ground black pepper
- 1 lemon

- 1 cup onion, chopped
- 1 tablespoon minced garlic
- 3/4 pound uncooked lean ground beef
- 12 ounces uncooked whole-wheat pasta, penne rigate suggested
- 2 1/2 teaspoon fennel seed
- 28 ounces canned crushed tomatoes, fire-roasted
- 1/4 teaspoon table salt
- 1/2 teaspoon crushed red pepper flakes
- 1/2 teaspoon dried oregano
- 1 pound(s) cooked spinach, ends trimmed, cut crosswise into 1 1/2-inch pieces
Crunchy Taco Cups

- 1 pound lean ground beef

- 6 ounces diced tomatoes
- 1 (4 ounce) can diced green chiles
- 1 1/2 cups shredded sharp cheddar cheese

- 1 tablespoon brown sugar
- 3/4 cup water
- 2 onions, sliced
