Southern Fried Pork Chops

In a shallow dish, combine flour, salt, and pepper
- 1 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup water
- 4 (1-inch) pork loin chops (1 1/2 to 2 pounds total)
- 2 cups vegetable shortening
Huevos Ree-os

Butter the griddle (or a skillet) and crack open the eggs on to it, with a sprinkling of salt
- 3 whole Eggs
- 3 slices Cheese (provolone, Swiss, Cheddar, Jack, Etc.)
- 1 cup Picante Sauce
- 1 Tablespoon Butter
- Salt To Taste
- 2 whole Flour Tortillas
- 2 Tablespoons Fresh Cilantro (optional)
Grilled Salmon with Garlic Mayo Recipe

Combine 3 tablespoons oil and rosemary; drizzle over salmon
- 3 tablespoons plus 1 teaspoon olive oil, divided
- 1/2 teaspoon dried rosemary, crushed
- 4 salmon fillets (6 ounces each)
- 8 garlic cloves, peeled
- 1 tablespoon lemon juice
- 3/4 cup mayonnaise
- 2 tablespoons plain yogurt
- 1 tablespoon Dijon mustard
Slow Cooker Bacon Wrapped Apple Barbecue

Wrap each chicken breast in 2 slices of bacon and place in slow cooker
- 2 small boneless skinless chicken breasts
- 4 slices bacon
- 1/2 cup BBQ sauce (homemade or store bought)
- 2 large apples, peeled and cur into small pieces
- 2 tablespoons lemon juice
Sautéed Medallions of Pork with Apple Gravy

Cut the tenderloin into 1/2-inch slices
- 1 two to three pound pork tenderloin
- 2 tablespoons vegetable oil
- salt and pepper
- 2 to 3 tablespoons all-purpose flour
- 1 cup chicken broth
- 1 cup apple cider or apple juice

Combine first 5 ingredients in a large bowl; add eggs and oil, stirring until dry ingredients are moistened

- 1 teaspoon ground cinnamon
- 3 large eggs, beaten
- 1 cup vegetable oil
- 1 1/2 teaspoons vanilla extract
- 1 (8-ounce) can crushed pineapple, undrained
- 1 cup chopped pecans
- 2 cups chopped bananas

Green Bean & Balsamic Salad

Place beans in a large saucepan and cover with water
- 3/4 pound fresh green beans, trimmed
- 3 cups cherry tomatoes, quartered
- 1-3/4 cups cubed English cucumber
- 6 tablespoons olive oil
- 3 tablespoons balsamic vinegar
- 1-1/2 teaspoons ground mustard
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 teaspoon sugar
- 1/4 teaspoon garlic powder

Preheat oven to 350 degrees (325 if using a glass pan)
- Cake Batter:
- 2 cups flour
- 1 1/2 cups sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 1/3 cups sour cream
- 2/3 cup butter, softened
- 1 teaspoon vanilla
- 3 eggs
- 1/2 teaspoon baking soda
- Middle & Top:
- cinnamon sugar (I keep my cinnamon and sugar in a glass shaker so I didn’t measure exactly how much I used – a guesstimate would be 2 tablespoons for each layer)
