Black Olive Bruschetta

1. Preheat oven to 400 degrees F
- 1 baguette, cut into 1/2-inch thick slices
- 1/4 cup extra virgin olive oil, divided
- 3 cloves fresh garlic, pressed or minced
- 1/2 yellow onion, minced
- 6 oz. Sliced Black Ripe olives
- 1 teaspoon balsamic vinegar
- 1/2 cup pine nuts
- 4 ounces cream cheese
- 1 tablespoon fresh basil, minced (optional)
- Small jar sliced roasted red peppers (optional)
MY FAVORITE CARAMEL ICING

Combine caramels and water in 1 1/2-quait saucepan
- 1/4 pound (16) vanilla caramels
- 1/4 cup water
- 3 tablespoons butter or margarine
- 2 cups sifted confectioners' sugar
- 2 tablespoons chopped walnuts
Chicken & Wild Rice Soup

Heat oil in soup pot over medium heat
- 2 tablespoon olive oil
- 1 small onion, chopped
- 1 cup shredded carrots
- 5 cups water
- 1 (6.2-ounce) package fast-cooking long-grain and wild rice mix, seasoning packet reserved
- 1 (10-ounce) package frozen chopped broccoli
- 2 cups chopped cooked rotisserie chicken
- 1 (8-ounce) loaf pasteurized prepared cheese product, cubed
- 1 (10-3/4-ounce) can cream of chicken soup, undiluted
Lemon Cake

Preheat oven to 350 F Place all ingredients in mixing bowl
- Cake:
- 1 (18.25-ounce) lemon cake mix (like Duncan Hines Moist Deluxe Lemon Supreme)
- 1 (3-ounce) package lemon gelatin (like Jell-O)
- 3/4 cup vegetable oil
- 3/4 cup water
- 4 eggs
Strawberry Sauce

Place all the ingredients in a medium saucepan over medium-high heat
- 2 pounds Strawberries, Hulled
- 1 cup Sugar
- 1 teaspoon Vanilla
- 1/2 whole Lemon, Juiced
- A Couple Drops Red Food Coloring (optional)
Applesauce 'n' Spice Bread

Preheat oven to 350 degrees F
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 teaspoon ground cinnamon, divided
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground allspice
- 1 cup sugar
- 1/2 cup vegetable oil
- 1 1/4 cups applesauce
- 2 eggs
- 3 tablespoons milk
- 1/2 cup coarsely chopped pecans
- 1/4 cup chopped pecans
- 1/4 cup packed brown sugar
Peanut Pockets

Arrange crackers in bottom of foiled-lined 8-inch square pan, cutting crackers to fit, if necessary
- 8 graham cracker squares
- 6 squares semi-sweet chocolate
- 1/4 cup milk
- 1 cup creamy peanut butter
- 2 tablespoons margarine or butter
- 1 tub (8 ounces) whipped topping, thawed
Margarita Grilled Pork Tenderloin

Combine first 8 ingredients in a large resealable plastic freezer bag
- 1/2 cup frozen limeade concentrate, thawed
- 1/2 cup water
- 3 cloves garlic, minced
- 1/4 cup chopped fresh cilantro
- 1 tablespoon minced jalapeno
- 1 1/2 tablespoons tequila (optional)
- 1 teaspoon ground cumin
- 1/2 teaspoon chili powder
- 2 (1-pound) pork tenderloins
- cooking spray
- 1/2 teaspoon salt
Lemon Jello Cheesecake

In a bowl, combine butter and brown sugar and whip until creamy
- Ingredients for crust (9X13 inch pan)
- 2 sticks (1 cup) butter (room temperature) 226 grams
- 1/2 cup brown sugar 119 grams
- 2 cups flour 280 grams
- 1/2 sliced almonds 45 grams
- Ingredients for lemon filling
- 2 small boxes Lemon Jello
- 2 cups hot water
- 2 8 oz. packages cream cheese (room temperature)
- 1/2 cup sugar
- 1 pint whipping cream
Meatballs Macaroni and Cheese

In pasta pot, add butter and let it melt
- 1 stick butter
- 1/3 cup flour
- 1 cup milk
- 10 ounces Velveeta, cut in chunks
- 2 cups cheddar cheese
- Salt and pepper and red pepper
- Cooked drained pasta
- Spaghetti sauce
- Frozen meatballs, cooked
