1 To make Red Chile Sauce, remove stems, seeds, and veins from chile pods
- 3 oz California or New Mexico red chile pods
- 2 1/2 cups water
- 3 tablespoons all-purpose flour
- 1 1/2 teaspoons salt
- 2 cloves garlic
- 1 can (8 oz) tomato sauce
- 8 corn tortillas
- 1 tablespoon canola oil
- 2 cups Red Chile Sauce
- 1 1/2 cups shredded cooked chicken
- 1 cup shredded Oaxaca or Muenster cheese (4 oz)
- 1/3 cup finely chopped green or red onions
- 1 cup crumbled queso fresco, Cotija or feta cheese (4 oz)
- Fresh cilantro sprigs
Miss Hudson's Banana Pudding

Preheat oven to 400 degrees F
- 1 3/4 cups sugar
- 3/4 cup all-purpose flour
- 2 3/4 cups milk
- 4 egg yolks
- 2 tablespoons vanilla extract
- 1 (11-ounce) box vanilla wafers
- 3 ripe bananas, cut into 1/4-inch-thick slices (3 cups)

- 5 plum (Roma) tomatoes, cut into 1/4-inch slices
- 1 jar (12 oz) roasted red bell peppers, drained, chopped
- 1/2 cup Italian dressing
- 1/2 cup Original Bisquick® mix
- 1 tablespoon salt-free Cajun seasoning
- 1 1/4 lb uncooked large shrimp, peeled, deveined
- 3 tablespoons butter
- 2 cups shredded provolone cheese (8 oz)
- Chopped fresh parsley, if desired
Chicken Lasagna

Cook noodles according to package directions
- 8 ounces lasagna noodles
- 1 cup milk
- 1/2 teaspoon poultry seasoning OR sage OR savory....you choose
- 1 cup cottage cheese
- 1/4 cup green pepper...chopped
- 4 cups steamed or boiled white chicken meat (I use 4 whole breasts) cut into 1 inch pieces
- 2 cans cream of mushroom soup
- 3/4 teaspoon salt
- 1 8 ounce package cream cheese...room temperature
- 1/4 cup onion...chopped
- 1/4 cup parsley...minced
- 1 1/2 cups buttered breadcrumbs
