Tomato & Chicken Penne

Cook pasta according to package directions; drain
- 16 oz. package of Penne Pasta, uncooked
- 1/4 c. olive oil
- 1 tsp. garlic, chopped
- 28 oz. can diced tomatoes, drained ( I used the ones with the jalapeño's in it!)
- 1/2 c. fresh basil, chopped or 1 tsp. dried basil
- 2 lbs. boneless, skinless chicken breasts, cooked and cubed
- 8 oz package shredded mozzarella cheese
- salt and pepper to taste

Cook smoked sausage in a Dutch oven over medium heat, stirring constantly, 3 minutes or until browned
- 1 (16-ounce) package Cajun-style smoked sausage, cut into 1/4-inch slices

- 1 medium onion, chopped
- 1 medium-size green bell pepper, chopped
- 4 cups chopped cooked chicken
- 1 (32-ounce) container chicken broth

Fall-off-the-Bone Short Ribs

In soup pot, heat oil over medium-high heat
- 2 tablespoons vegetable oil
- 3 pounds beef short ribs
- 1 (10-3/4-ounce) can condensed onion soup
- 1 cup water
- 1 tablespoon lemon juice
- 1/4 teaspoon ground cloves
- 1/2 teaspoon black pepper
- 1 slice pumpernickel bread, crumbled

- 3 pounds white onions, sliced moderately thin
- 2 tablespoons butter
- 2 tablespoons vegetable oil
- 1/2 cup white wine or vermouth (optional)
- 1 1/2 cups brown or green lentils (not red lentils or french lentils!)
- 2 cups long grain white or brown rice (I prefer the brown for a bit more character)
- 1/4 teaspoon ground cinammon
- 1/4 teaspoon ground cumin
- Salt and pepper
- Flat leaf parsley for serving

1 Heat oven to 350° (325° for dark or nonstick pan)
- 1 box brownie mix
- 1/4 cup water
- 1/4 cup vegetable oil
