Skillet Chicken Nachos

1 In 12-inch nonstick skillet, heat oil over medium-high heat
- 1 tablespoon olive or vegetable oil
- 1 1/4 lb boneless skinless chicken breasts, cut into 1/4-inch pieces
- 1 package (1 oz) taco seasoning mix
- 1 can (8 oz) tomato sauce
- 1 medium red bell pepper, chopped (1 cup)
- 1 can (15 oz) black beans, drained, rinsed
- 1 can (7 oz) whole kernel sweet corn, drained
- 2 cups shredded Mexican cheese blend (8 oz)
- 6 oz tortilla chips (about 42 chips)
- 1/4 cup chopped fresh cilantro
Chocolate Snowballs

Heat oven to 375 degrees F
- 1 pouch (1 lb 1.5 oz) Betty Crocker sugar cookie mix
- 1/2 cup butter or margarine, melted
- 1 egg
- 1/4 cup Gold Medal all-purpose flour
- 1/4 cup unsweetened baking cocoa
- 1/2 cup finely chopped almonds
- 1 teaspoon almond extract
- 60 Hershey's Kisses milk chocolates, unwrapped
- 3/4 cup powdered sugar
Rice with Vienna Sausages

Put olive oil in pot over low heat
- 2 cups rice (I use long grain for rice with sausage)
- 1 can of 9 oz. Vienna sausage (cut each sausage into 3 or four wheels)
- A Knorr bouillon cube (or your favorite)
- 2 packets Sazon Goya with coriander and annatto
- 4 tablespoons olive oil
- 3 cups water
- 1 square of cilantro pesto or sofrito (recipe follows)
- 1 tsp of vinegar or lemon juice (optional)

Italian Chicken and Rice

- 1 1/2 cups water
- 1 cup uncooked rice
- 1 (14-1/2 ounce) can whole tomatoes, undrained and broken up
- 1/2 pound processed cheese spread (like Velveeta), cubed
- 1/2 cup finely chopped onion
- 1/4 teaspoon garlic powder
- 2 teaspoons Italian seasoning, divided
- 1 chicken (2-1/2 to 3 pounds), cut into 8 pieces
- 2/3 cup grated Parmesan cheese

Preheat oven to 325°. Mix half of sugar with cake flour and sift into bowl
- 1 1/4 cups (150 g) cake flour
- 1 1/2 cups (300 g) granulated sugar
- 1 1/2 cups egg whites (375 ml) (about 11 egg whites)
- 1 tbsp. (15 ml) lemon juice
- 1 tsp.(5 g)cream of tartar
- 1/2 tsp.(5 g) salt
- 2 tsp. (10 ml) vanilla
