Apple Crisp

Set oven to 350 degrees. Put butter and brown sugar in mixer and cream 5 minutes
- Topping:
- 12 Tablespoons of butter
- 1 1/2 cups brown sugar
- 1 1/2 cups flour
- 1 1/2 cups quick oats
- 1 1/2 tsp vanilla
- 1 1/2 tsp cinnamon
- 1/4 tsp ground nutmeg
- Filling mix:
- 1/3 cup granulated sugar
- 1 Tablespoon flour
- 2 Tablespoons fresh lemon juice
- 1 1/2 tsp vanilla
- 2 tsps cinnamon
- 1/4 tsp ground nutmeg
- 4 Granny Smith apples, peeled and sliced thin
- 4 Honey Crisp apples, peeled and sliced thin
Light Lemon Mousse

In a large saucepan, combine the sugar and cornstarch; gradually stir in milk until smooth
- 10 servings
- 3/4 cup sugar
- 1/2 cup cornstarch
- 3 cups fat-free milk
- 2/3 cup lemon juice
- 1-1/2 teaspoons grated lemon peel
- 1/4 teaspoon vanilla extract
- 2 cups reduced-fat whipped topping
- 3 drops yellow food coloring, optional
Blueberry Jello Salad

1 – Drain the pineapple juice into a one (1) cup measuring cup
- 1 can (16-ounces) crushed pineapple (reserved drained juice)**
- 1 cup boiling water
- 2 boxes (3 ounces) of grape or berry-blue JELL-O gelatin (can substitute sugar-free JELL-O)*
- 1 can (16-ounces) blueberry pie filling
- 1/2 cup fresh blueberries, washed
- 1/4 cup chopped pecans
Caramel Apple Bread Pudding

In large bowl, combine applesauce, milk, brown sugar, egg substitute, vanilla and cinnamon
- 1 cup unsweetened applesauce
- 1 cup fat-free milk
- 1/2 cup packed brown sugar
- 1/2 cup egg substitute
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 5 cups cubed day-old bread
- 1/2 cup chopped peeled apple
- 1/2 cup fat-free whipped topping
- 1/2 cup fat-free caramel ice cream topping
Best Chicken Stew

Adjust oven rack to lower-middle position and heat oven to 325 degrees
- 2 pounds boneless, skinless chicken thighs, halved crosswise and trimmed
- Kosher salt and pepper
- 3 slices bacon, chopped
- 1 pound chicken wings, halved at joint
- 1 onion, chopped fine
- 1 celery rib, minced
- 2 garlic cloves, minced
- 2 teaspoons anchovy paste
- 1 teaspoon minced fresh thyme
- 5 cups chicken broth
- 1 cup dry white wine, plus extra for seasoning
- 1 tablespoon low sodium soy sauce
- 3 tablespoons unsalted butter, cut into 3 pieces
- 1/3 cup all-purpose flour
- 1 pound small red potatoes, unpeeled, quartered
- 4 carrots, peeled and cut into 1/2-inch pieces
- 2 tablespoons chopped fresh parsley
Crock Pot Beer Chicken

Place all ingredients in crock pot, and cook on high for 4-5 hrs, or low for 6-8 hrs
- 2 lbs skinless, boneless chicken breasts (I used 8 breasts, 4oz ea)
- 1 bottle or can of your favorite beer (I used Guinness)
- 1 tsp salt
- 1 tsp garlic powder
- 1 tbsp dried oregano
- 1/2 tsp black pepper
TUNNEL OF LOVE CAKE

Combine ingredients as listed, beating on high speed of electric mixer 6 mins or till smooth, thick & creamy
- Tunnel Mixture:
- 1 (18-oz) pkg Devil's Food Cake Mix
- 3/4 cup cold water
- 1/4 cup oil
- 3 eggs
- 1 (4 oz) bar German Sweet Chocolate
- 1 TB milk
- 2 oz solid unsweetened chocolate
- 1/3 cup sugar
- 8 oz cream cheese
- 1/4 tsp vanilla
- Tunnel Of Love Glaze:
- 2 oz unsweetened chocolate
- 4 TB butter
- 2 TB light corn syrup
- 1 TB hot water
- 1 cup powdered sugar
Crab Stuffed Mushrooms #2

Mix together all ingredients and stuff mushroom caps with the filling and serve
- 1 LB. crab meat
- 8 OZ cream cheese
- 2 TBSP. Mayonnaise
- 2 TBSP. Lemon Juice
- 2 TBSP finely diced red bell pepper
- 1/2 tsp. dry mustard
- salt/pepper to taste

Perfect Potato Soup

Add the bacon pieces to a soup pot over medium heat and cook until crisp and the fat is rendered
- 6 slices thin bacon, cut into 1-inch pieces
- 3 carrots, scrubbed clean and diced
- 3 stalks celery, diced
- 1 medium onion, diced
- 6 small russet potatoes, peeled and diced
- 1/2 teaspoon Cajun spice mix, plus more if needed
- Salt and freshly ground black pepper
- 8 cups low-sodium chicken or vegetable broth
- 1 cup milk
- 3 tablespoons all-purpose flour
- 1/2 cup heavy cream
- 1 teaspoon minced fresh parsley
- 1 cup grated Cheddar
New York-Style Cheesecake

Preheat oven to 375 degrees
- Graham Cracker-Crumb Crust:
- 1 1/4 cup graham cracker crumbs, from 11 rectangular graham crackers
- 4 tablespoons butter or margarine, melted
- 1 tablespoons sugar
- Cheesecake:
- 3 packages (8 ounces each) cream cheese, softened
- 3/4 cup sugar
- 1 tablespoon all-purpose flour
- 1 1/2 teaspoon vanilla extract
- 3 large eggs
- 1 large egg yolk
- 1/4 cup milk
- Fresh berries, for garnish
