For Apple Mixture: Peel and core apples

- 8 cups Granny Smith apple slices
- 1 1/2 cups brown sugar

- 1 1/2 cups granulated sugar
- 3 cups flour
Cocoa Puffs® Banana Cream Pie

1 Heat oven to 350°F. 2 In food processor or blender, place the 2 1/2 cups cereal
- 2 1/2 cups Cocoa Puffs® cereal
- 1/3 cup butter, melted
- 1 package (4-serving size) banana cream instant pudding and pie filling mix
- 1 1/4 cups milk
- 1/2 cup frozen (thawed) whipped topping
- 2 medium bananas, sliced (1 cup)
- Additional thawed whipped topping
- Additional sliced banana
- Additional Cocoa Puffs® cereal, crushed
Caramel Apple Cheesecake

Preheat oven to 325°. In medium bowl, combine all crust ingredients
- 1 cup graham cracker crumbs
- 1/4 cup butter melted
- 1/4 cup granulated sugar
- 3 packages (8 oz. each) cream cheese softened
- 6 eggs
- 1 teaspoon vanilla extract
- 1 3/4 cup sour cream, divided
- 1 cup granulated sugar
- 1 tablespoon cornstarch
- 1 teaspoon ground cinnamon
- 3 small Granny Smith apples peeled, cored and coarsely chopped
- 1/2 cup + 3-4 tbsp. caramel ice cream topping
- 1/4 cup confectioner's sugar
Homemade Rice-a-Roni

Preheat oven to 400 degrees
- 1/2 cup pasta, broken into small pieces
- 1 cup brown rice
- 2 cups beef broth
- 1 tbs parsley
- 1/2 tsp garlic powder
- 1/2 tsp thyme
- 1/2 tsp pepper
- 1/3 cup margarine or butter
Light Pumpkin Cheesecake Mousse

Place everything in a blender, and blend until smooth
- Toppings:
- 1 cup low-fat or fat-free cottage cheese
- 1/2 cup pumpkin puree
- 1/4 cup milk
- 2 tbs sugar-free instant butterscotch (or vanilla) dry pudding mix
- 1/2 tsp pumpkin pie spice
- 1/2 tsp cinnamon
- 3-6 packets stevia, or to taste (or sweetener of choice to taste)

In a large bowl, cream butter and 1 cup sugar until light and fluffy
- 1/2 cup butter, softened
- 1 cup plus 2 tablespoons sugar, divided
- 1 egg
- 1/2 teaspoon pure vanilla extract
- 1-1/2 cups all-purpose flour
- 1/4 teaspoon baking soda
- 1/4 teaspoon cream of tartar
- 1 teaspoon ground cinnamon
Sweet and Sour Chicken #2

Preheat a stovetop wok over medium-heat or an electric wok to 400 degree F
- 2 tablespoons vegetable oil
- 1 1/2 pounds boneless, skinless chicken breasts, cut into 1/2-inch strips
- 2 tablespoons ketchup
- 1 tablespoon honey
- 1 (20-ounce) can pineapple chunks in juice, undrained
- 2 large red bell peppers, cut into thin strips
- 3 tablespoons soy sauce
- 2 tablespoons cornstarch
- 6 scallions (green onions), cut into 1-inch pieces
Almond Joy Cupcakes

1. Preheat your oven to 350 degrees F
- 1 box chocolate cake mix
- 1 cup water
- 1/3 cup unsweetened applesauce
- 3 eggs
- 1 small box sugar free/fat free chocolate cake mix
- 1 small (14oz) can sweetened condensed milk (you can use any kind)
- 2 1/4 cup shredded coconut, divided
- 1 pkg Baker’s Dipping Chocolate or half a bag of chocolate candy melts
- 24 whole almonds
- Buttercream frosting (recipe and ingredients follow)
Cinnamon-Apple Crostata

1 Heat oven to 450°. Remove pie crust from pouch; place flat on ungreased cookie sheet
- Crust:
- 1 box refrigerated pie crusts, softened as directed on box
- Filling:
- 1/2 cup sugar
- 4 teaspoons cornstarch
- 2 teaspoons ground cinnamon
- 4 cups thinly sliced, peeled cooking apples (4 medium)
- 1 teaspoon sugar
- 2 tablespoons chopped pecans or walnuts
- Topping:
- Whipped cream, if desired
