Tuna Macaroni Salad

Cook macaroni according to package directions, omitting salt and oil
- 4 oz. medium-size shell pasta (about 2 cups dry)
- 1 cup chopped celery
- 1 cup chopped red bell pepper
- 1/2 cup sliced green onion
- 1 can (6 oz.) water-pack tuna, drained
- 1/2 cup nonfat ranch-style dressing
Pork 'n' Cider Crisp

In a shallow dish, completely coat pork chops with flour
- 1/4 cup all-purpose flour
- 4 shoulder pork chops (1 to 2 pounds total), about 1-inch thick
- 1/4 cup (stick) butter
- 1 small onion, chopped
- 1/4 teaspoon salt
- 2 large apples, peeled, cored, and chopped
- 1 tablespoon cornstarch
- 1 teaspoon ground cinnamon
- 1 cup apple juice
- 1 tablespoon light brown sugar
Easy Muddy Buddies® Snickerdoodle White Fudge

1 Line 8-inch square pan with foil, leaving foil hanging over 2 sides for easy removal
- 3 oz white chocolate baking squares (from 4-oz package)
- 2 tablespoons butter, cut into pieces

- 1 can (14 oz) sweetened condensed milk (not evaporated)

1. Place 1/4 cup of BBQ sauce in the bottom of the crockpot
- 1.5 lb pork ribs ($1.98) Manager’s Special
- 1/4 – 1/2 bottle favorite BBQ sauce ($.50)
- 1 onion ($.40)
- 3 cloves garlic, crushed ($.03)
- 8-10 small potatoes (about 2-3 lbs) ($.80)
- 1/2 – 1 cup milk ($.13) I used rice milk
- 2-3 Tbsp butter or olive oil ($.20) See GFCFSF mashed potato recipe here
- Salt/pepper, to taste
- 2 large broccoli heads ($1) Price matched from Kroger

- 1/4 cup almond or cherry flavored liqueur or orange juice

- 2 chicken breasts, split, skinned, and boned
- 1/2 cup pecan pieces, finely chopped
- 1/3 cup seasoned bread crumbs
- 1 teaspoon grated orange peel
- 1/4 teaspoon salt
- 1/4 teaspoon paprika
- 1/4 cup honey
- 1 tablespoon orange juice
- 1 can (16 ounces) whole berry cranberry sauce
Chili Con Carne

1. Heat 1 tablespoon of the oil in a large nonstick skillet over medium-high heat
- 1 tablespoon plus 1 teaspoon olive oil
- 2 pounds boneless beef round steak, trimmed and cut into 1/2-inch cubes
- 3 cloves garlic, minced
- 1 large onion, finely chopped
- 3 tablespoons plus 1 teaspoon chili powder
- 3 1/2 teaspoons ground cumin
- 1 teaspoon salt
- 1/2 teaspoon cayenne pepper
- 1 package (10 ounces) frozen corn
- 3 tablespoons finely ground cornmeal
- Sour cream, sliced avocado and cilantro for garnish (optional)
