Rinse chicken; pat dry. Place each chicken half, boned side up, between 2 pieces of clear plastic wrap
- 2 whole medium chicken breasts (1 1/2 pounds total) skinned, boned, and halved lengthwise
- 4 thin slices prosciutto or fully cooked ham
- 4 slices Gruyere or Swiss cheese (4 ounces)
- 1 small tomato, peeled, seeded, and chopped
- 1/4 cup sliced fresh mushrooms
- 2 cloves garlic, minced
- 1/2 cup milk
- 1/2 cup sour cream or plain yogurt
- 2 Tbs all-purpose flour
- 1/4 tsp paprika
- 1/8 tsp ground nutmeg
- 2 cups cooked noodles

Cook Pasta according to package directions
- 6 oz packaged Linguine or Fettuccine
- 3 Tbs margarine or butter
- 2 Cups Broccoli florets
- 1 Cup bias-sliced carrots
- 1 medium onion, cut into thin wedges
- 1 clove garlic, minced
- 1 Cup fresh or frozen pea pods
- 1/2 Cup cashews or almonds
- 1/4 Cup white wine
- 1 tsp dried thyme, crushed
- 1/4 tsp pepper
- 1/4 Cup grated parmesan cheese
Moros y Cristianos -- Black Beans and Rice Dish

Cover the dry beans with about four cups water in a two-quart saucepan
- INGREDIENTS:
- 1 & 1/2 cups black beans, dried
- 1/4 cup olive oil for sautéing
- 2 & 1/2 cups onion, diced
- 2 & 1/2 cups green pepper, seeded and diced
- 4 cloves garlic, crushed and chopped
- 3 teaspoons cumin, ground
- 1 teaspoon oregano
- 1 bay leaf
- 3 tablespoons white vinegar
- 2 tablespoons tomato paste

- 1/4 cup white sugar
- 1/4 cup brown sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 6 tablespoons unsalted butter, chilled and cut into small pieces
- 1/4 cup boiling water
- 3 tablespoons white sugar
- 1 teaspoon ground cinnamon
