Preheat the oven to 400 degrees F
- 4 large russet potatoes, each about 3/4 pound each, scrubbed and dried
- 2 to 4 tablespoons unsalted butter
- 1/3 cup sour cream
- 1 scallion, finely chopped
- Freshly grated nutmeg, optional
- 1/2 cup shredded sharp cheddar
- Kosher salt and freshly ground black pepper
Braised Pork Chop with Campfire Beans

1. Micro-Wave onion, garlic, chili powder
- 1 1 1 onion, chopped fine
- 2 2 2 garlic cloves, minced
- 1 1 1 tsp chili powder
- 1 1 1 Tbs vegetable oil
- 2 2 cans 2 (15-ounce cans pinto or navy beans, rinsed
- 1/4 1/4 1/4 cup ketchup
- 1 1 1 Tbs molasses
- 1/2 1/2 1/2 tsp liquid smoke
- 4 4 3/4 4 (8-10 ounce) bone-in blade-cut pork chops, 3/4 inch thick, trimmed
- Salt and Pepper
- 1 1 1 Tbs cider vinegar
- 1 1 1 Tbs Dijon mustard
- 2 2 2 scallions, sliced thin
Super Easy Pork Chops

Season pork chops with salt and pepper to taste
- 4 Pork Chops, about 3/4 inch to one thick
- 2 tsp olive oil
- 1 clove garlic, minced
- 3 Tbs soy sauce
- 1/4 Cup chicken broth
- 2 Tbs brown sugar or honey
- dash of cayenne pepper
- 1 tsp cornstarch mixed with 1 Tbs water to make a smooth paste
Baked Fried Chicken

Place thawed chicken breast tenderloin strips in a bowl of milk
- Mix in a Gallon Size Ziploc or Large Bowl:
- 1/2 tsp. Salt
- 1 T Season All
- 3/4 tsp Pepper
- 1 c. Flour
- 2 tsp. Paprika
Buffalo Chicken Wings

1. Lightly coat slow cooker with vegetable oil spray
- 4 pounds chicken wings, cut at joints and trimmed, wingtips discarded
- 1 Tbs paprika
- 1 tsp cayenne pepper
- 1 tsp salt
- 1/2 tsp pepper
- 1/2 Cup Frank's RedHot Original Cayenne Pepper Sauce
- 6 Tbs unsalted Butter, melted
- 2 Tbs molasses
Split Pea Soup in Pressure Cooker

In large pot, rinse peas well in cold water
- lb dried split peas
- 8 cups water
- 1 ham bone or 1 lb diced ham
- 2 medium onions, chopped small
- 2 large celery ribs, chopped small
- 2 large carrots, peeled and diced
- 4 medium potatoes, peeled and diced
- 1 bay leaf
- 2 beef bouillon cubes
- 1 1/2 teaspoons salt
- 1/4 teaspoon black peppercorns, crushed
- 1 pinch dried thyme

Chicken Fried Steak

- 2 lbs boneless rib-eye steaks, cut 1/2 inch thick
- 2 Tbsp table salt, for brine
- Vegetable oil, for frying
- 4 cups self-rising flour, such as White Lily (see Tips)
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 Tbsp kosher salt
- 1 tsp fresh black pepper
- 1 scallion, green part only, chopped
