Bring a large pot of salted water to a boil
- 1 box of Fusilli pasta
- 3 Cups Cherry Tomatoes, halved
- 1/2 Lb Provolone Cheese, Diced
- 1/2 Lb Sliced Pepperoni
- Large Bell pepper, diced
- 1 (10 oz) can Black Olives, drained
- 1/4 tsp Sugar
- 8 oz Italian Dressing
Beef and Potato Stew

Mix together, flour, cumin, chili powder, garlic and cinnamon in a bowl
- 3 Tbs Flour
- 1/2 tsp cumin
- 1/2 tsp chili powder
- 2 cloves garlic, minced
- 1/4 tsp cinnamon
- 1 1/2 lb lean beef chunks
- 2 Tbs oil
- 1 cup beef stock
- 1/2 cup apple juice
- 6 small potatoes, scrubbed and cubed
- 2 sweet potties, scrubbed and cubed
- 1 green pepper, cut into strips
- 1 red pepper, cut into strips
- 1 onion, sliced
- 1 28 oz can plum tomatoes
- 1 28 oz can tomato puree
- 2 Tbs honey
- 2 granny smith apples
- 1 can Kidney beans
- 2 Tbs chopped parsley
- cheddar cheese and black olives for topping
Amish Pot Roast

Preheat oven to 300 degrees
- 3 Pounds Swiss Steak, Top Round, Rump, Bottom Round or Chuck Roast.
- 1 tbs oil
- 1/4 cup soy sauce
- 1 cup prepared coffee
- 2 bay leaves
- 1 clove garlic minced
- 1/2 tsp oregano
- 2 onions sliced
- Additional Soy Sauce and coffee as needed.
Jerk Chicken

1. Process the first 18 ingredients, covered, in a blender until smooth
- 1 large onion, chopped
- 3 green onions, chopped
- 3/4 Cup white vinegar
- 1/2 Cup orange juice
- 1/4 Cup dark rum
- 1/4 Cup olive oil
- 1/4 Cup soy sauce
- 2 Tbs lime juice
- 1 habanero or scotch bonnet pepper, seeded and minced
- 1 Tbs sugar
- 1 Tbs allspice
- 1 Tbs dried thyme
- 1 1/2 tsp cayenne pepper
- 1 1/2 tsp rubbed sage
- 1 1/2 tsp pepper
- 3/4 tsp ground nutmeg
- 3/4 tsp ground cinnamon
- 8 lbs. bone in chicken breast halves and thighs
- 1/2 Cup whole allspice berries
- 1 Cup applewood chips
- 1/2 Cup ketchup
Homemade Enchilada Sauce

- 2 (8 ounce) cans tomato sauce
- 1 (4 ounce) can chopped green chilies, undrained
- 1/2 cup onion, chopped
- 2 teaspoons chili powder

- 1/4 teaspoon dried oregano

- 3 tbs (packed) dark brown sugar
- 3 tbs paprika
- 2 tbs course salt
- 1 teaspoon cayenne pepper
- 2 untrimmed boneless pork shoulder halves (also known as Boston butt; about 6 pounds total)
- For Mop*
- 1 cup apple cider vinegar
- 1/2 cup water
- 2 tbs Worcestershire sauce
- 1 tbs coarsely ground black pepper
- 1 tbs course salt
- 2 teaspoons vegetable oil
- 8 pounds (about) 100% natural lump charcoal briquettes
- 6 cups (about) hickory wood smoke chips, soaked in cold water at least 30 minutes.
- 12 soft hamburger buns with seed, split
- Carolina red Barbecue sauce

- Make Dry Rub*
- Mix first 5 ingredients in small bowl to blend.
- Place pork, fat side up, on work surface. Cut each piece lengthwise in half. Place on large baking sheet. Sprinkle dry rub all over pork; press into pork. cover with plastic; refrigerate at least 2 hours. (Can be made one day ahead. Keep chilled).
- Make Mop*
- Mix first 6 ingredients in medium bowl. Cover and refrigerate.
