American Macaroni Salad

In a large bowl combine the macaroni, celery, onion, parsley and tomato, if using
- 2 cups dry elbow macaroni, cooked, rinsed, and drained
- 1/3 cup diced celery
- 1/4 cup minced red onion, soaked in cold water for 5 minutes, drained
- 1 tablespoon minced flat-leaf parsley
- 1/2 cup diced vine-ripened tomato (optional)
- 1/2 cup prepared mayonnaise
- 3/4 teaspoon dry mustard
- 1 1/2 teaspoons sugar
- 1 1/2 tablespoons cider vinegar
- 3 tablespoons sour cream
- 1/2 teaspoon kosher salt, plus more to taste
- Freshly ground black pepper

Firehouse Barbecue Chicken

For sauce, in small bowl stir together ketchup, marmalade, vinegar, celery salt, chili powder and hot pepper sauce
- 1/2 cup of ketchup
- 1/4 cup orange marmalade
- 1 Tbs vinegar
- 1/2 tsp celery seed
- 1/2 tsp chili powder
- 1/4 to 1/2 tsp bottled hot pepper sauce
- 1 2 1/2 to 3 pound broiler-fryer chicken, cut up
Penne Pasta & Shrimp

Bring large pot of slightly salted water to a boil
- 1 (16 oz) package penne pasta
- 2 Tbs Olive Oil
- 1/4 Cup chopped red onion
- 1 Tbs chopped garlic
- 1/4 Cup white wine
- 2 (14.5 oz) cans diced tomatoes
- 1 pound shrimp, peeled and deveined
- 1 Cup Parmesan Cheese
Spanish Bean Soup recipe

Sauté the green pepper and onion in olive oil until tender, about 5 minutes
- 1 large green pepper, diced
- 1 large onion, diced
- 6-7 cloves of garlic, minced
- 2 tablespoons of olive oil
- 2 cans of garbanzo beans (do not drain liquid)
- 5 to 6 medium russet potatoes, cubed (about 1 1/2 inches)
- 1 packet of Vigo saffron seasoning
- 1 tablespoon oregano
- 2 quarts of water
- 2 bay leaves
- salt and pepper to taste
- 1 ham bone or 1 pound of cubed ham
- 2 chorizo sausage sliced
Blueberry Bread

Grease two loaf pans and set aside
- 3 Cups all-purpose flour
- 1 tsp baking soda
- 1 tsp salt
- 2 Tbs cinnamon
- 1 1/4 cups sugar
- 1 1/2 cups vegetable oil
- 4 eggs, beaten
- 1/4 cup water
- 2 Cups Blueberries
Blueberry Muffins

Inspired by the muffins sold at Boston's Jordan Marsh
- 1 cup sugar
- 2 eggs
- 2 cups of all-purpose flour
- 2 tsp double acting baking powder
- 1/4 tsp salt
- 1/2 cup milk
- 1 tsp vanilla
- 2 1/2 blueberries
- sugar for sprinkling tops of muffins.
Ricotta Balls

Mix all ingredients together, the dough will be soft and sticky
- 2 1/4 cups self rising flour
- 4 Tbs sugar
- 1 small container Ricotta
- 6 eggs

- 1 small can evaporated milk
- 1 jar marsh mellow fluff
- 3/4 tsp salt

- 1 pound Jimmy Dean sausage (hot)

- 1 Cup Sugar
- 1/2 Cup packed Brown Sugar

- 2 tsp instant Coffee Granules, optional
- 2 3/4 Cups (16 oz) bittersweet Chocolate Chips, divided
