Heat olive oil in large pot
- 2 TB olive oil
- 2 onions, chopped
- 2 leeks, chopped (white and lt green parts)
- 2 potatoes, chopped
- 2 carrots, chopped
- 3 celery stalks, chopped
- salt
- pepper
- 3 quarts stock
- 4 oz thin spaghetti, broken in pieces
Apple Strudel, Cinnamon

Preheat oven to 350 degrees
- 6 layers phyllo dough
- 1/4 brown sugar
- 1 stick butter
- 1 teaspoon cinnamon
- 3 granny smith apples, peeled, cored and diced
- 2 tablespoons sugar
- 1/2 teaspoon cinnamon
- 1/2 cup raisins
Boston Brown Bread

Serve with cream cheese. You can bake these in coffee cans if desired
- 2 eggs
- 2 cups brown sugar
- 1 cup molasses
- 4 cups buttermilk
- 4 cups whole wheat flour
- 2 cups unbleached flour

Chocolate Chile Cookies

This is a Weight Watcher recipe
- 2 oz unsweetened baking chocolate squares, chopped (I used Lindt intense orange dark chocolate, 47%)
- 1 cup flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/4 tsp cayenne pepper or more to taste
- 1/2 cup sliced almonds
- 1 cup dk brown sugar, packed
- 1/3 cup sugar, granulated
- 2 large eggs, at room temperature
- 1 tsp vanilla extract
Crispy Chicken Sandwich

Preheat oven to 375 degrees
- 3 ounces raw boneless skinless lean chicken breast
- 1 small hamburger bun (light, if available)
- 1/3 cup Fiber One bran cereal (original)
- 1/4 cup fat-free liquid egg substitute
- 2 tablespoons fat-free mayonnaise
- 2 slices tomato
- 1 leaf romaine lettuce
- 1/4 teaspoon cayenne pepper, divided
- Dash salt
- Dash black pepper
- Dash chili powder
Eggplant and Mozzarella Finger Sandwiches

Preheat oven to 425. On baking sheet, lightly brush eggplant with olive oil
- Sandwiches:
- 4 Japanese eggplants, slice diagonally into 1/2 inch thick slices
- 2 – 3 TB olive oil
- salt and pepper
- 1 lb fresh mozzarella, cut into 1/2 inch thick slices
- 3 large eggs, lightly beaten
- 1 cup freshly grated Parmesan cheese
- vegetable oil, for frying
- Herb spread:
- 3 garlic cloves
- 1/2 cup loosely packed basil leaves
- 1/4 cup loosely packed parsley
- red pepper flakes
- 3 TB olive oil
- Blend all in food processor.
Gnocchi

Pierce the potato all over with a fork
- 1 (1-pound) russet potato
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1 large egg, beaten to blend
- 1/4 cup all-purpose flour
- 1/4 cup shaved Pecorino Romano
- Your favorite marinara sauce

This is a lighter version and is great on everything! I especially like to use it for my pesto swirls
- 2 cups fresh basil leaves
- 4 tsp minced garlic
- 2 TB pine nuts
- 1/3 cup extra virgin olive oil
- 2 TB grated Parmesan cheese
- salt & pepper
Carrot Pineapple Cake

Preheat oven to 350. Lightly coat a 13x9 pan with cooking spray
- Cake:
- 1/2 cup pitted prunes (12 prunes)
- 1/4 cup hot water (or less)
- 1 pkg yellow cake mix
- 1/4 cup vegetable oil
- 2 large eggs
- 1 tsp cinnamon
- 8 oz can crushed pineapple, drained
- 1 cup grated carrots (3 medium)
- Frosting:
- 4 oz cream cheese, at room temp
- 1 small jar marshmallow creme
- Garnish:
- 1/2 cup pecans, chopped
