Black Bean Soup

Combine beans and stock. Bring to a boil
- Garnishes:
- 4-15 oz cans black beans, drained and rinsed
- 32 oz chicken stock
- 1 can diced tomatoes with juice
- 1/2 large onion, chopped
- 1 pkg Lipton Onion Soup Mix
- Hot Sauce (optional)
- Sour Cream
- Cilantro
- Green Onion
- Mexican blend cheese
Mashed Garlic Potatoes

Start with the roasted garlic: Preheat the oven to 350 degrees F
- For the Garlic Paste:
- 1 pound whole garlic heads
- 1/2 cup pure olive oil
- Sea salt and freshly ground pepper
- For Potatoes:
- 2 pounds Yukon Gold potatoes
- 3 sticks unsalted butter, at room temperature
- 1 tablespoon garlic paste
- 1 1/2 cups heavy cream, or more to taste
- Sea salt, preferably gray sea salt, and freshly ground black pepper
- 1/2 to 2/3 cup extra-virgin olive oil
Quiche, Master Recipe

Preheat oven to 350 degrees F
- Optional Quick Crust:
- 2 tablespoons unsalted butter, softened
- 2 tablespoons finely grated Parmesan cheese
- 1 1/2 cups (1-inch, day-old) bread cubes, preferably sourdough
- 2 tablespoons unsalted butter or extra-virgin olive oil
- 9 -inch glass or ceramic pie pan
- Custard:
- 2 cups half-and-half
- 2 large eggs
- 2 large egg yolks
- 1/2 teaspoon kosher salt
- Freshly ground black pepper
- Freshly grated nutmeg
- Pinch cayenne or paprika
- Fillings:
- 2 to 3 cups prepared vegetables, such as braised leeks, broccoli, sauteed onions, mushrooms, spinach, peppers, tomatoes
- 4 ounces, or about 1 cup grated or crumbled cheese, such as Cheddar, goat cheese, Gruyere, Parmesan, fontina, provolone, mozzarella, Gouda, solo or combined
- 1 to 4 tablespoons minced herbs, such as parsley, chives, tarragon, basil, dill, rosemary, marjoram
- 3/4 cup chopped crisp bacon, diced ham or salami
- 1 tablespoon all-purpose flour, optional, this is good to use with vegetables that release liquid during cooking, such as zucchini and spinach
Mandarin Cream Delight

1. To prepare crust, combine butter, 1/2 c sugar, and vanilla ext in a large bowl
- Crust:
- 9 TB butter, softened
- 1/2 cup sugar
- 1 tsp vanilla
- 1 1/2 cups flour
- 1/8 tsp salt
- Cooking spray
- Filling:
- 2 ea 11 oz cans mandarin oranges in light syrup, undrained
- 1/4 cup sugar
- 1 16 oz carton fat free sour cream
- 1 8 oz carton low-fat sour cream
- 2 ea 3.4 oz pkgs vanilla instant pudding mix or 2 ea 1.4 oz pkgs sugar-free vanilla instant pudding mix
- 1 8 oz container frozen reduced-calorie whipped topping, thawed
Pie Crust

Make the Crust: In a food processor combine the flour, sugar, and salt
- 2 1/4 cups sifted all-purpose flour
- 1 teaspoon sugar
- 1 teaspoon salt
- 12 tablespoons cold unsalted butter (6 ounces), cut into pieces
- 1/4 cup ice water (strain out the ice just before using)
- 1 teaspoon red wine vinegar
Tiramisu

This is a low fat version of Tiramisu which normally contains 880 calories per serving
- 2/3 cup hot water
- 2 TB brandy
- 1 TB instant espresso powder
- 1/4 cup plus 1 TB sugar
- 1/4 cup whipping cream
- 8 oz cream cheese, (low fat) softened
- 1/4 cup 1% milk
- 1/2 tsp vanilla
- 4 oz sponge-type lady fingers (30 halves)
- 1 TB cocoa powder
Zucchini bread with Lemon Glaze

In a medium bowl, mix first 3 ingredients
- bread:
- 2 cups cake flour
- 1/2 tsp salt
- 2 tsp baking powder
- 2 eggs
- 1/2 cup canola oil
- 1 1/3 cup sugar
- 2 TB lemon juice
- 1/2 cup buttermilk
- zest of one lemon
- 1 cup grated zucchini
- glaze:
- 1/4 cup sugar
- 1/4 cup lemon juice
Cauliflower Fritters

Mash cauliflower. Add next four ingredients; season to taste and mix to combine
- 1 large head of cauliflower, steamed
- 2 eggs
- 1/4 cup Parmesan cheese
- 1 tsp curry powder
- 1/3 cup bread crumbs
- salt and pepper
- 1/4 cup canola oil
Taco Soup

- 4 small cans tomatoes
- 1 can black beans
- 1 can kidney beans
- 1 can corn
- 1 small can olives
- 1 taco seasoning packet
- 1 lb ground turkey

- 2 tablespoons extra virgin olive oil
- 1/2 teaspoon salt
- 1 to 1 1/4 cups warm water

- 1/4 cup olive oil
- 10 anchovy fillets, optional
- 4 pounds Spanish onions, peeled and thinly sliced
- 2 teaspoons salt
- 2 teaspoons freshly ground pepper
