Chicken and Spinach

Preheat oven to 350. Cover the base of a large rectangular dish with spinach
- 2 pkgs frozen chopped spinach, defrosted and drained
- 8 chicken breasts, boneless and skinless
- salt and pepper to taste
- 1 medium jar mayonnaise
- 1 medium carton Greek yogurt
- 1 small carton half and half
- 1 TB curry powder
- 3/4 cup bread crumbs
Salmon, Blackberry Glazed

Preheat grill to medium high
- 1/4 cup blackberry jam
- 2 tsp soy sauce
- 1 small clove garlic, minced
- crushed red pepper flakes
- olive oil
- 2 lbs salmon fillets
- salt and papper
Whole Wheat Pie Crust

Combine flour and salt in a bowl
- 2 cups whole wheat pastry flour, chilled
- 1 tsp salt
- 3/4 cups butter, chilled
- 6-8 TB ice water
Beef Stew, Southern

Spray the crock pot with Pam or use a crock pot liner
- 2 lbs stew meat, cut into 1" chunks
- 1/4 cup flour
- 1/4-1/2 onion, chopped
- 10 3/4 oz can cream of mushroom
- 10 oz can beef broth
- 1 tsp worcestershire sauce
- 1 tsp garlic powder
- 1/2 tsp paprika
- 4-5 carrots, sliced
- 3-4 potatoes, diced
Scones with Streusel Topping

For the streusel topping, mix all ingredients and set aside
- Streusel:
- 3 TB whole wheat pastry flour
- 2 TB butter, melted
- 5 TB brown sugar
- 1 tsp cinnamon
- 1/2 cup chopped walnuts
- Scones:
- 3 1/4 cups whole wheat pastry flour
- 1 TB baking powder
- 1/2 tsp salt
- 1/2 cup cold butter
- 2 large eggs
- 1/2 cup plus 2 TB heavy cream or buttermilk, divided
- 1/2 cup maple syrup
- 1/2 tsp vanilla extract
- 1 cup walnuts, coarsely chopped
Black Bean Mango Salsa

This is great with salmon or chicken
- To this add:
- 3 diced ripe mangoes
- 1 can black beans, drained and rinsed
- 1/2 cup each diced red, yellow, orange peppers
- 1 small jalapeno (opt)
- 1/2 red onion, diced
- 3-4 roma tomatoes, diced
- 2-3 garlic cloves, finely chopped
- 1/2 bunch cilantro or parsley, finely chopped
- 2 TB lime juice
- 1 TB red wine vinegar
- 2 tsp olive oil
- salt/pepper to taste
Mom's Potato Salad

Boil potatoes til cooked through
- 6 potatoes, peeled and cubed
- 3 hard cooked eggs, finely chopped
- 1/2 cup onion, finely chopped
- 1/2 cup celery, chopped
- oil
- vinegar
- salt and pepper
Italian Sesame Cookies

I like to lightly toast the sesame seeds first
- 1/2 cup butter, softened
- 1/4 cup each brown and granulated sugars
- 2 eggs
- 2 tsp vanilla
- 2 cups flour
- 2 tsp baking powder
- 1/4 tsp salt
- milk
- 1 cup sesame seeds
Corn and Vegetable Soup

Put 2 cups of the corn and the milk into a blender or food processor, until smooth
- 4 cups fresh corn kernels or 2 (10-ounce) packages frozen, thawed
- 2 cups nonfat milk
- 1 tablespoon olive oil
- 1 large onion, diced (about 2 cups)
- 1 medium red bell pepper, seeded and diced (about 1 cup)
- 1 medium zucchini, (about 1/2 pound) diced
- 2 cups low-sodium chicken or vegetable broth
- 2 plum tomatoes, seeded and diced
- 3/4 teaspoon salt
- Freshly ground black pepper
- 1/2 cup fresh basil leaves, cut into ribbons
Crab-Stuffed Snow Peas

In small bowl, combine the crab, mayonnaise, chili sauce, salt, pepper sauce and pepper
- 1 can (6 ounces) crabmeat, drained, flaked and cartilage removed
- 2 tablespoons mayonnaise
- 1 tablespoon chili sauce or seafood cocktail sauce
- 1/8 teaspoon salt
- 3 drops hot pepper sauce
- Dash pepper
- 16 fresh snow peas
