Mexican Lasagna

This is such an easy recipe because nothing needs to be pre-cooked
- 1 pkg taco seasoning
- 1 lb ground beef, raw
- 16 oz can refried beans
- 2 tsp oregano
- 3/4 tsp garlic powder
- 12 lasagne noodles, uncooked
- 2 1/2 cups water
- 2 1/2 cups salsa
- 2 cups sour cream
- 3/4 cup finely chopped onion
- 1 can black olives
- 1 cup shredded cheddar cheese
Eggnog Scones

Combine flour, sugar, bp, bs, salt and nutmeg in large mixing bowl
- 3 cups flour
- 1/4 cup sugar
- 2 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1/4 tsp nutmeg
- 3/4 cup butter, cut in small pieces
- 1 cup eggnog
- 2 TB milk
- Sugar
Cinnamon Bread

Preheat oven to 375. Grease 2 standard loaf pans and set aside
- 1 pkg yeast
- 1/4 cup warm water
- 2 cups milk
- 1/2 cup sugar
- 1/2 cup butter
- 2 tsp salt
- 1 1/2 TB cinnamon
- 6-7 cups flour
- 2 eggs, beaten
- Cinnamon sugar, to garnish
Chocolate Haystacks

Melt chocolate, butter and marshmallows in a double boiler
- 6 oz chocolate chips
- 1/3 Cup butter
- 2 Cups mini marshmallows (or 16 large)
- 1/4 tsp vanilla
- 1 Cup coconut
- 1 Cup oatmeal (quick oats)
Potato Leek Soup

Remove roots, outer leaves, and tops from leeks
- 2 leeks (1 pound)
- 6 cups chicken broth
- 2 TB olive oil
- 3 cups coarsley chopped onion (1 pound)
- 1 cup chopped carrot
- 1 cup chopped celery
- 2 garlic cloves, minced
- 2 cups Yukon Gold potato, cubed (1 lb)
- 1/2 tsp pepper
- 1/4 tsp sea salt
Zucchini Parmesan Crisps

A great way to add veggies to your meal or just to snack on!
- 1 lb. zucchini or squash (about 2 medium-sized)
- 1/4 cup shredded parmesan (heaping)
- 1/4 cup Panko breadcrumbs (heaping)
- 1 tablespoon olive oil
- 1/4 teaspoon kosher salt
- freshly ground pepper, to taste
Macaroni Salad

This salad was part of the buffet for Mom & Dad's 50th Wedding Anniversary party
- Dressing:
- 2 Cups cooked shell macaroni
- 4 eggs, chopped
- 1 cup sweet pickles
- 8 oz can sliced black olives
- Green onion or sweet onion, to taste
- 1 Cup chopped celery
- 1 Cup mayo
- 1 TB mustard (regular)
- 1/2 tsp celery seed
- 1/4 Cup sweet pickle juice
- 1/2 Cup sweet relish
- S&P or seasoning salt, to taste
Lemon Pie
