Maple-Oatmeal Scones

Recipe from The Barefoot Contessa Cookbook
- For the Scones:
- 3 1/2 cups all-purpose flour
- 1 cup whole-wheat flour
- 1 cup quick-cooking oats, plus additional for sprinkling
- 2 tablespoons baking powder
- 2 tablespoons granulated sugar
- 2 teaspoons salt
- 1 pound cold unsalted butter, diced
- 1/2 cup cold buttermilk
- 1/2 cup pure maple syrup
- 4 extra-large eggs, lightly beaten
- 1 egg beaten with 1 tablespoon milk or water, for egg wash
- For the Glaze:
- 1 1/4 cups confectioners' sugar
- 1/2 cup pure maple syrup
- 1 teaspoon pure vanilla extract
Garlic Lime Tilapia

In a shallow dish, mix together first 8 ingredients
- 1 teaspoon salt
- 1 teaspoon pepper
- 1/4 teaspoon cayenne pepper (can eliminate if too spicy for you)
- 1/4 teaspoon paprika
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon thyme
- 1/4 cup whole wheat flour
- 1-1 1/2 lbs tilapia fillets
- 2 tablespoons butter
- 2 tablespoons olive oil
- 1/2 white wine
- 2 tablespoons lime juice

Place the fruit, sugar, and brandy in a 2 to 3 quart pitcher and stir to combine
- 2 cups sliced fruit, any combination of oranges, lemons, apples, pears, and plums
- 2 tablespoons sugar
- 1/2 cup brandy
- 2 bottles red wine, preferably Burgundy

Poached Salmon

In large skillet sauté garlic in olive oil over medium heat, add white wine and cover for about 5 minutes
- 1/4 cup extra virgin olive oil
- 2 cloves garlic, pressed
- 3/4 cup white wine or white grape juice with a splash of vinegar
- 10-oz. MSG free low sodium chicken broth
- Pepper to taste
- 4 wild caught salmon fillets
Almost-Famous Broccoli-Cheddar Soup

- 1 small onion, chopped
- 1/4 cup all-purpose flour
- 2 cups half-and-half
- 3 cups low-sodium chicken broth
- 2 bay leaves
- 1/4 teaspoon freshly grated nutmeg
- Kosher salt and freshly ground pepper
- 4 7-inch sourdough bread boules (round loaves)
- 4 cups broccoli florets (about 1 head)
- 1 large carrot, diced
- 2 1/2 cups (about 8 ounces) grated sharp white and yellow cheddar cheese, plus more for garnish

- 1 head raw cauiflower, cut into 1 inch pieces
- 2 hard boiled eggs, diced
- 1 onion, chopped
- 1 celery stalk, chopped

- 1/2 tsp dry mustard
- 1/2 tsp rice vinegar
