BBQ Beef Sandwiches

Place beef in slow cooker
- 2 1/2 lb. lean boneless chuck roast
- 1/4 cup tomato ketchup
- 1 tablespoon Dijon-style mustard
- 2 tablespoons brown sugar
- 1 garlic clove -- crushed
- 1 tablespoon Worcestershire sauce
- 2 tablespoons red wine vinegar
- 1/4 teaspoon liquid smoke flavoring
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 10 French rolls or sandwich buns -- (10 to 12)
Barbecue Beef Sandwiches

- 3 pounds beef boneless chuck roast
- 1 cup barbecue sauce
- 1/2 cup apricot preserves
- 2 tablespoons red or green bell pepper-- chopped
- 1 tablespoon Dijon mustard
- 2 teaspoons brown sugar -- packed
- 1 small onion -- sliced
- 12 whole hamburger buns or Kaiser rolls -- split

- Zest of 1-2 lemons, finely grated (2 small, 1 large)
- 1/3 cup fresh lemon juice (about 1 large or 2 small lemons)
- 1 teaspoon vanilla
- 1 1/2 teaspoons salt
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 2 cups sugar
- 5 large eggs
- For the glaze
- 1/4 cup granulated sugar
- 1/4 cup lemon juice (from half to a full lemon, depending on size)
- 1/2 cup powdered sugar
- 2 tablespoons lemon juice
- zest of 1 lemon (about 1 tablespoon)
- 1/2 teaspoon vanilla
