Pressure Cooker Blueberry Jam

In a pressure cooker, combine blueberries, sugar, orange juice, orange peel, and nutmeg
- 4 cups blueberries
- 4 cups sugar
- 1 cup orange juice
- 1 tsp. grated orange peel
- 1/2 tsp. grated nutmeg
- 1 (6oz.) bottle pectin or 1 (1 3/4oz.) package dry pectin
- melted paraffin
Bread Machine French Bread

Place all ingredients in the pan of your bread machine in the order listed above
- 1 1/8 cup warm water
- 1 tablespoon sugar
- 1/2 teaspoon salt
- 1 tablespoon canola oil (you could also use vegetable or better blend)
- 3 cups all purpose flour
- 1 package active dry yeast
WW - Lobster Mac and Cheese

- 1 Tbs. butter
- 2 Tbs. flour
- 1 (14.5 oz.)can diced fire roasted tomatoes
- 1 cup shredded reduced-fat cheddar cheese
- 1/2 cup fat free milk
- 1/3 cup grated Parmesan cheese
- 1/2 tsp. mustard powder
- 1/4 tsp. black pepper
- 4 cups whole wheat elbow macaroni, cooked
- 3/4 pound lobster meat, cut into chunks
- 2 Tbs. chopped fresh parsley

For the cake: Pre-heat oven to 350 degrees
- For the Strawberry coulis:

- ■18 tablespoons (2 sticks plus 2 tablespoons) butter, room temperature
- ■4 1/2 cups cake flour
- ■1 1/2 cups whole milk
- ■9 large egg whites, lightly beaten
- ■1 tablespoon pure vanilla extract
- ■2 tablespoons baking powder
- ■1 1/2 teaspoons salt
- ■2 1/4 cups sugar
- ■1 pint of strawberries, hulled and cut in half
- ■1 cup hulled strawberries
- ■3 tablespoons sugar
- ■1 tablespoon lemon juice
- For the Basil Whipped cream:
- ■1 1/2 cups heavy cream
- ■6 tablespoons sugar
- ■8 ounces cream cheese
- ■3/4 cup Greek yogurt
- ■1/3 cup basil leaves

- BISCUITS:
- 2 cups Flour
- 4 teaspoons baking powder
- 1 cup milk, cold
- 1/3 cup sugar
- 5 tablespoons of butter (cold or frozen)
- 1 teaspoon salt
- 3 ounces blueberries, fresh or dried
- GLAZE:
- 1 cup powdered sugar
- 1/8 cup water
- 1 teaspoon vanilla
- 1/2 teaspoon lemon juice
Red Velvet Pound Cake

1. Preheat oven to 350 degrees
- Nonstick spray
- 3/4 cup low-fat chocolate milk
- 1 Tbsp. red food coloring
- 1 package pound cake mix
- 1/4 cup unsweetened cocoa powder
- 2 eggs
- 1 package miniature cocolate chips
- 1 can (12-ounce) whipped cream cheese frosting
Crock Pot Roast Beef

Slice the onion, and spread around the bottom of your crockpot
- 5 lbs bone-in rib eye (this is the max that will fit in a 6.5 qt crockpot)
- 1 large yellow onion, sliced in rings
- 6 cloves garlic, peeled
- 2 T cornstarch
- 1 tsp kosher salt
- 1 tsp black pepper
- 1 T Worcestershire sauce
- 1/2 cup beef stock/broth
Pressure Cooker Chicken Pot Pie with Puff Pastry

If you're a newbie to pressure cookers, this is a great recipe to get you started in the world of pressure cooking
- 1/4 cup olive oil
- 1 large onion, sliced
- 2 garlic cloves, crushed
- 3 carrots, 1/2 inch slices
- 1 cup celery, 1/2 inch slices
- 6 chicken breast halves, cut into 1 1/2 inches
- 1 1/2 cups chicken broth or stock
- 1 tablespoon lemon juice
- 2 teaspoon sherry
- 1/2 pound mushrooms, thinly sliced
- 3 medium potatoes, peeled and diced
- 1 1/2 teaspoon salt
- 1/4 teaspoon white pepper
- 1 teaspoon dried tarragon
- 1/2 teaspoon dried thyme
- 1/2 teaspoon ground fennel
- 1 bay leaf
- 1 1/2 cups frozen green peas
- 1/2 cup half-and-half or milk
- 2 tablespoon butter, softened
- 2 tablespoon potato starch or flour
- 1 (17 1/4 ounce) package frozen puff pastry, thawed
Vitamix - Triple Berry Smoothie

1. Place all ingredients into the Vitamix container in the order listed and secure lid
- 1/4 cup water
- 1/2 cup low fat vanilla yogurt
- 1/2 cup frozen unsweetened strawberries
- 1/2 cup frozen unsweetened blueberries
- 1/2 cup frozen unsweetened raspberries
Basic Flour Tortillas

First, briefly mix all dry ingredients by hand in a large mixing bowl
- 3 c. All-purpose flour
- 1/4 c. Lard or Shortening
- 1 tsp. Salt
- 1/2 tsp. Baking Powder
- 1 c. Hot water (approx. 150F-180F); have additional 1/4 to 1/2 c. reserved as needed.
