Arancini (Rice Balls) with Marinara Sauce

Place a large heavy-bottomed pot over medium heat and add enough vegetable oil to rise 4 inches in the pot
- 2 cups cooked white rice, cooled (See Kelly's Notes)
- 1/2 cup grated Parmesan
- 3 eggs, separated
- 8 small cubes fresh mozzarella
- 1 cup Italian-style breadcrumbs
- Oil, for frying
- 1 cup store-bought or homemade marinara sauce
Vitamix - Midday Smoothie

1. Place all ingredients into the Vitamix container in the order listed and secure lid
- 1 medium orange, peeled, halved
- 4 small fresh strawberries
- 1/2 small banana, peeled
- 1/2 apple, quartered, seeded
- 1 cup fresh spinach, lightly packed
- 1 cup ice cubes
Pressure Cooker beef stew

1. In a 5-7 quart pressure cooker, heat 1 Tbs
- 2 Tbs. vegetable oil, plus more as needed
- 2 1/2 pounds beef chuck roast, cut into 1/4 inch pieces
- 1/2 tsp. salt, plus more to taste
- 1/4 tsp. pepper, plus more to taste
- 1 large onion, chopped
- 2 garlic cloves, finely chopped
- 2 cups beef stock
- 1 Tbs. tomato paste
- 1/2 tsp. dried thyme
- 1 bay leaf
- 4 medium carrots, cut into 1 inch length
- 4 medium or 1lb. of red-skinned potatoes, cut into 1 inch pieces
- 3 Tbs. unsalted butter, at room temperature
- 3 Tbs. all-purpose flour
One Pot Macaroni and Cheese

1. Add milk, cream, salt, dry mustard, pasta and butter into a medium sized pan
- 1 1/2 cups milk
- 1/2 cup heavy cream
- 1 tablespoon butter
- 2 cups dry pasta macaroni, penne, any small pasta will do)
- 1 1/2 cups grated cheese ( I used Cheddar, Gouda and Jack)
- 1/2 tsp dry mustard
- 1 tsp salt
Starbucks Pumpkin Pound Cake

Preheat oven to 350º. Grease a loaf pan, set aside
- 1 1/2 c. All Purpose Flour
- 1/2 tsp. Ground Cinnamon
- 1/2 tsp. Salt
- 1/2 tsp. Baking Soda
- 1/2 tsp. Baking Powder
- 1/4 tsp. Ground Cloves
- 1/4 tsp. Ground Nutmeg
- 1 1/2 c. Sugar
- 1/2 c. Fat Free VanillaYogurt
- 3 Egg Whites
- 1 c. Canned Pumpkin

1. For cake, preheat oven to 350 degrees
- Nonstick spray
- 1 package white cake mix
- 1 1/4 cups pear nectar
- 1/2 cup plus 1 Tbsp. liquid egg whites
- 1/3 cup vegetable oil
- 1 tsp. strawberry extract
- 2 bottles (1.25 ounces each)colored snowflake sprinkles
- 2 cups powdered sugar, sifted
- 5 Tbsp. strawberry milk
- 1 tsp. strawberry extract

This is a great recipe for camping
- 5-6 Bananas, ripe
- 5 Hershey's chocolate bars
- 1 pkg. mini marshmallows

Cooked Vanilla Frosting

FOR THE FROSTING: Whisk together in a saucepan the flour and milk
- For the cooked vanilla frosting:
- 5 Tbsp flour
- 1 cup milk
- 1 cup unsalted butter
- 1 cup granulated sugar
- 1-2 tsp vanilla
- NOTE: I doubled these ingredients to be sure I had enough to frost a cake.
Peanut Butter Cup S’mores Bars

1.Preheat the oven to 350 degrees
- 1/2 cup butter, softened
- 1/2 cup packed brown sugar
- 1/4 cup sugar
- 1 egg
- 1 teaspoon vanilla
- 1 1/4 cups flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup graham cracker crumbs
- 16 peanut butter cups, regular size
- 1 1/2 cups marshmallow fluff

- 1/2 medium sized onion, diced
- 2 large garlic cloves, crushed
- 1/4 cup minced parsley
- 1 large carrot, cut into bite sized pieces
- 1 1/2 cup long-grain brown rice
- 1 tsp. salt
- 1/4 tsp. white pepper
- 1 tsp. dried thyme
- 1 bay leaf
- 3 1/2 cups chicken broth
- 2 Tbs. lemon juice
- 1/2 lb. broccoli, stemes peeled and trimmed, bite size pieces
