Chicken Tikka Masala and Turmeric Rice

Start by seasoning the chicken breasts with some kosher salt, coriander, and cumin
- OPTIONAL:
- 3-4 Chicken Breasts
- Kosher Salt
- Ground coriander
- Cumin, to taste
- 1/2 cup plain yogurt
- 2 Tbsp butter
- 1 whole Large Onion
- 4 cloves of garlic
- 1 piece (approximately 2 Inches) Chunk Fresh Ginger
- 3 Tbsp Garam Masala
- 1 can of 28-Ounce Diced or Crushed Tomatoes
- 1 Tbsp Sugar
- ~1 Tbsp cayenne pepper (adjust to your tastes)
- 11/2 cup Heavy Cream
- Rice
- 2 cups Basmati rice
- 4 Tbsp butter
- 1 tsp salt
- 1 Tbsp turmeric
- 4 cups water
- 1-2 cups frozen peas
- Fresh Cilantro
- Chile Peppers
- Turmeric
Garlic and Butter Roasted Mushrooms with Capers

1. Preheat oven to 450ºF with rack in middle
- 8 oz mushrooms( white or baby bella or a combination thereof)*
- 3 tsp small capers
- 2 medium garlic cloves, minced
- 1 TBS oil( I used olive oil)
- 1 1/2 TBS unsalted butter, cut into pieces
- splash of white wine(optional)
- squeeze of fresh lemon juice
- chopped flat-leaf parsley
- dried chile flakes(optional)
- salt and pepper to taste
- *If mushrooms are large, cut in half
- or even in quarters
Garlic Scallion Noodles

Cook pasta according to package directions
- 8 oz (half a box) of angel hair or spaghettini noodles (I like Barilla's whole grain pasta)
- 4 tablespoons butter (half a stick)
- 5 cloves of garlic, minced or pushed through a garlic press
- 2 scallions finely chopped
- 2 tablespoons soy sauce
- 1 or 2 tablespoons of brown sugar (based on your own personal preference of sweetness)
Pasta with Gorgonzola & Hazelnuts

Begin by cooking your pasta by adding it to a large pot of salted, boiling water
- 1 pound fettuccine or tagliatelle, homemade or sore-bought
- 3 cloves garlic, minced
- 1/3 cup olive oil
- Juice from 1 lemon
- Course salt & freshly ground black pepper
- 1/2 cup crumbled Gorgonzola
- 1/4 cup toasted hazelnuts, roughly chopped
- Fresh flat leaf parsley for garnish

- 1/4 cup pecorino romano or parmigiano reggiano (parmesan), grated

Creamy Crawfish Pasta

Cook linguine according to package directions; drain
- 1 (8-ounce) package linguine
- 1/2 cup butter
- 1/3 cup all-purpose flour
- 1 bunch green onions, finely chopped
- 1 small onion, minced
- 4 garlic cloves, minced
- 1/2 green bell pepper, minced
- 2 celery ribs, minced
- 1 chicken bouillon cube
- 1 pint whipping cream
- 1 (2-pound) package frozen crawfish tails, thawed*
- 1 (10-ounce) can diced tomatoes and green chilies, drained
- 1 tablespoon Creole seasoning
- 1 tablespoon chopped fresh parsley
- 1/4 teaspoon pepper
- 1/8 teaspoon salt
- Dash of Hot sauce (optional)
- Shredded Parmesan cheese
