GALETTE DE POMME DE TERRE (POTATO GALETTE)

Put potatoes into a 4-qt. pot and cover by 1" with salted water
- 2 lb. Yukon gold potatoes, peeled and cut into 1⁄2" x 1⁄4"
- 2 tbsp. duck or bacon fat
- 2 tbsp. unsalted butter
- Kosher salt, to taste
- Freshly ground black pepper, to taste
- 1 tbsp. minced flat-leaf parsley
- 1 tsp. minced garlic
Caesar Salad - a girl and her pig

Put the anchovy fillets and garlic in a small food processor and pulse to a rough paste
- 7 whole salt-packed anchovies, rinsed, soaked, and filleted
- 1 medium garlic cloves, smashed and peeled
- 3 tablespoons Dijon mustard
- 1/4 cup Champagne vinegar
- 1 large egg
- 1 cup sunflower, peanut, or grapeseed oil
- 1 ounce chunk of Parmesan, very finely grated
- 2 heads romaine lettuce, chilled
- Croutons, use your favorite method
- A chunk of Parmesan for grating
- Maldon or another flaky sea salt
- A few anchovy fillets for garnish
Aligot - French Mashed Potatoes with Cheese and Garlic

1. Place potatoes and 1 TBS of salt in a large sauce pan; add water to cover by 1 inch
- 2 LB Yukon gold potatoes peeled and cut into 1/2 inch thick slices, rinsed well, and drained
- 6 TBS butter
- 2 medium garlic cloves, minced
- 1-1/2 cups whole milk
- 1 cup mozzarella cheese, grated
- 1 cup Gruyere cheese, grated
- Salt and pepper
ORECCHIETTE WITH BROCCOLI RABE AND SAUSAGE

1. Bring 4 quarts water to a rolling boil in a large pot
- 1 pound orecchiette
- 8 ounces hot italian sausage casings removed
- 6 cloves medium-large garlic minced or pressed through a garlic press (2 tablespoons)
- 1/2 teaspoons red pepper flakes hot
- 1 bunch broccoli rabe (about 1 pound), trimmed and cut into 1 1/2 inch lenghts
- 1/2 cup low-sodium chicken broth
- 1 tablespoon extra virgin olive oil
- 1/2 cup grated Parmesan cheese (about 1 ounce)
Easy Chimichangas

In a skillet over medium-high heat, stir together beef, Tex-Mex spice mix and water
- roast beef, cooked and shredded somewhere between a pound and pound in a half will make about 8 chimichangas

Pre-heat oven to 400 F. Coat mini-muffin pan with butter
- 1 Tbsp butter, for greasing pans
- 2 large eggs
- 2 cups grated zucchini (1 medium to large zucchini)
- 1/2 yellow onion, finely chopped
- 1/2 cup coarsely grated cheddar cheese (2 ounces)
- 1/2 cup plain breadcrumbs
