Heat olive oil & butter in a large saucepan over medium heat
- 1 pound large shrimp, peel and devein, reserve shells
- 2 oranges, juiced plus 2 tbsp. zested, keep aside
- 3 tbsp. olive oil
- 2 tbsp. butter
- 2 leeks, halved, rinsed and thinly sliced
- 2 garlic cloves, minced
- 2 carrots, peeled and chopped
- 6 thyme sprigs, tied together
- 1 bay leaf
- 1/3 cup tomato paste
- 1/4 cup dry sherry
- 1/4 cup flour
- 3 cups water
- 2 cups single cream (18%)
- sea salt & pepper to taste
- 8 shrimps, sauteed (for garnish)
- 4 thyme sprigs (for garnish)
Prawn Pasta with Bisque Sauce

In a large pan, heat the olive oil and add the onion, carrot and celery
- 1 onion, roughly chopped
- 1 large carrot, roughly chopped
- 1 stick of celery, roughly chopped
- 45 ml olive oil plus another 30 ml to fry the prawns.
- 3 cloves garlic, sliced
- 12 large prawns
- 100 ml cream
- salt to taste
- chopped parsley for garnish
- 100 to 150 grams fresh pasta per person

- 4 * 4 cups Pinto Beans
- 4 * 4 slices Thick Bacon (can Also Use Salt Pork, Or Ham Hock, Or Diced Ham)

Pan-fried Pork and Cabbage Dumplings

- For the filling, mix together: 1 lb ground pork, 1 cup shredded Napa cabbage, 2 tablespoons minced shallots, 1 tablespoon cornstarch, 2 teaspoons salt or 1 tablespoon soy sauce, a pinch of ground pepp
- Egg wash: Gently beat 1 or 2 eggs.
Slow-Cooker Chicken & Sausage Stew

Heat the olive oil over medium-high heat
- 2 lbs chicken (I used a mixture of boneless breasts & thighs)
- 1 Tbsp olive oil
- 14 oz light smoked turkey sausage, 1/2-inch rounds cut in half
- 2 large onions, minced
- 6 cloves garlic, minced
- 1 Tbsp tomato paste
- 1/2 tsp dried thyme
- Pinch crushed red pepper flakes
- 3 Tbsp all-purpose flour
- 1/2 cup dry white wine (or chicken broth)
- 3 cups low-sodium/reduced-fat chicken broth, plus more as needed
- 2 bay leaves
- 2 15-oz cans cannellini beans, drained and rinsed
- 8 oz spinach, thawed and squeezed of excess liquid

- 2 medium cloves garlic, minced (about 2 teaspoons)
- Kosher salt and freshly ground black pepper
- 1/2 loaf crusty italian bread, crust removed, sliced into 1/2-inch slices
- 5 ounces grated Parmesan cheese, plus more for serving
- 1 1/2 cups all-purpose flour
- 2 large eggs
- 1/2 cup vegetable or canola oil
- 1 quart Italian-American red sauce (see note above)
