Pizza Sauce - Crushed Tomato

Stir all the ingredients together, adding the salt gradually, to taste
- 1 can (28 ounces) crushed or ground tomatoes (see comments above)
- 1 teaspoon salt (or to taste, start with 1/2 teaspoon and then adjust as needed)
- 1/4 teaspoon coarsely ground black pepper
- 1 teaspoon dried basil (optional) (or 2 tablespoons minced fresh basil)
- 1 teaspoon dried oregano (optional) (or 1 tablespoon minced fresh oregano)
- 1 tablespoon granulated garlic powder (sandy, not the fine powder)
- (or 5 cloves of fresh garlic, minced or crushed)
- 1 to 2 tablespoons red wine vinegar, balsamic vinegar, or lemon juice, or a combination of both (optional--some brands are more acidic than others, but I find that most benefit from at least 1 tablespoon)
SHRIMP WITH HERBY WHITE BEANS AND TOMATOES

Heat 2 Tbsp. oil in a large skillet over medium; cook shallot until just softened and golden, about 2 minutes
- 3 tablespoons olive oil, divided
- 1 medium shallot, thinly sliced
- 1 (14.5-ounce) can diced tomatoes
- 1/2 teaspoon (or more) kosher salt, divided
- 1/2 teaspoon freshly ground black pepper, divided
- 1 (15-ounce) can white beans, rinsed, drained
- 1/4 cup Roasted Garlic Herb Sauce or high-quality pesto, plus more for serving
- 8 ounces shrimp, peeled, deveined (about 16 medium)
- Thick slices of crusty toasted bread (for serving)
Crispy Pork Belly

Untie the belly of pork if it is rolled and lay it flat on a chopping board

- 2 heads of garlic, halved horizontally

- 3 slices white sandwich bread, torn into pieces
- 2 tablespoons unsalted butter, cut into small pieces and chilled
- 1 tablespoon finely grated lemon zest
- 1 small garlic clove, minced
- 6 tablespoons nonpareil capers, drained
- Salt and pepper
- 1/3 cup all-purpose flour
- 2 large eggs, at room temperature
- 4 thin-cut chicken cutlets

Bass Pale Ale & Hoisin Braised Short Ribs

Season the ribs generously with salt and pepper and drizzle with 3 tablespoons of the oil
- 4 lbs. beef short ribs, about 10 ribs

- 4 to 5 pound pork shoulder, bone-in
- 1 tablespoon brown sugar
- 2 teaspoons cumin
- 1 1/2 teaspoons paprika
- 1/2 tablespoon salt

- 1 tablespoon olive oil
- 2 medium yellow onions, peeled and cut into wedges
- 3 medium carrots, peeled and cut into large chunks
- 4 cloves of garlic, peeled

Sticky Lemon Rolls with Lemon Cream Cheese Glaze

- For the dough:
