Crab Jalapeno Hushpuppies

Heat 3-inches of oil in a pot, with at least a 3-inch air gap at the top, to 350F
- 4 ounces (about 1 cup) all-purpose flour
- 3 ounces (about3/4 cup) cornmeal
- 1/2 teaspoon baking powder
- 1 teaspoon kosher salt
- 2 tablespoons sugar
- 1/2 cup buttermilk
- 1 egg
- 1 stick (8 tablespoons) unsalted butter, melted
- 1 ounce cream cheese, melted
- 12 ounces lump crab meat, picked through for shells
- 1/3 cup shredded sharp cheddar cheese
- 1 jalapeno, minced
- 1 clove garlic, minced
- Oil, for frying

1. Bring a very large pot of well-salted water to a full, rolling boil
- 3 * 3 tablespoons butter, divided
- 1/2 * 1/2 white onion, finely diced
- 4 * 4 cloves garlic
- 1 1/2 * 1 1/2 pounds white or brown button mushrooms, sliced scant 1/4" thick
- 1/2 * 1/2 cup white wine or vermouth

Black Bean Burgers with Salsa and Guacamole

Rinse and drain black beans
- 1 (16-ounce) can black beans
- 1/2 red pepper, cut into 4 pieces
- 1/2 medium sweet onion, cut into chunks
- small handful cilantro leaves
- 2 garlic cloves, minced
- 1 tablespoon ground flaxseed
- 1 tablespoon chili powder
- 1 teaspoon ground cumin

- 1/2 cup plus 2 tablespoons olive oil
- 10 sprigs fresh thyme

Mocha Mint Chocolate Chip Cookies

1) Chop butter into small pieces and roughly chop mint leaves
- 1/2 cup unsalted butter
- 1/3 cup (5 grams) fresh mint leaves
- 3/4 cup lightly packed brown sugar
- 1 tsp vanilla
- 1 large egg
- 1 & 1/4 cup all-purpose flour
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1 tbsp plus 1 tsp instant coffee

Easy Mocha Hot Fudge

Melt chocolate, butter, and coffee in heavy saucepan over medium heat
- # 4 (1-ounce) squares semi-sweet chocolate
- # 1 teaspoon instant coffee
- # 2 tablespoons butter or margarine
- # 1 (14-ounce) can Eagle Brand Sweetened Condensed Milk (NOT evaporated milk)

- One (14.5 ounce) can sauerkraut, rinsed, drained and patted dry
- 1 cup (4 ounces) shredded Swiss cheese
- 1 generous cup chopped corned beef
