Chocolate Chip Cookies

1. Heat oven to 325 2
- 2 cups plus 2 Tbs all-purpose flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1.5 sticks butter - melted and cooled until warm
- 1 cup brown sugar, packed
- 1/2 cup granulated sugar
- 1 lg. egg plus 1 egg yolk
- 2 tsp vanilla
- 1 - 1.5 cups semisweet choc. chip
Cajun Chicken Pasta

Sprinkle 2 teaspoons Cajun spice over both sides of the chicken breasts
- 2 boneless, skinless chicken breasts
- 1 tablespoon Cajun spice mix
- 3 tablespoons olive oil
- 1 green bell pepper, seeded and sliced
- 1 red bell pepper, seeded and sliced
- 1/2 onion, sliced
- 3 cloves garlic, minced
- 4 whole Roma tomatoes, diced
- 2 cups chicken broth
- 1/2 cups white wine
- 1 cup cream
- Cayenne pepper, to taste
- 1 pound cooked fettuccine
- 2 scallions, chopped (for garnish)
Lobster and Corn Chowder

Bring a large pot three-fourths full of salted water to a boil over high heat
- 2 live lobsters, each 1 1/4 to 1 1/2 lb.
- 1 Tbs. canola oil
- 5 cups low-sodium chicken stock
- 1/2 cup white wine
- 3 ears of corn, kernels removed, kernels
- and corncobs reserved
- 3 bacon slices, diced
- 1 yellow onion, chopped
- 2 large carrots, diced
- 3 celery stalks, diced
- 2 cups heavy cream
- 2 Yukon Gold or other potatoes, cut
- into 1/2-inch pieces
- Salt and freshly ground pepper, to taste
- 1 tsp. chopped fresh thyme
- 2 tsp. chopped fresh chives
MANGO GRANITA

1. Combine mango and water in food processor or blender and puree until smooth
- 1 pound ripe mangoes , peeled, pitted, and sliced thin
- 3/4 cups water
- 1/3 cup granulated sugar
- 1 medium lemon , juiced to yield 1 tablespoon juice
Baked French Fries Recipe with Garlic, Parsley & Parmesan Cheese

Preheat oven to 425 degrees F
- 4 medium russet potatoes (about 1 3/4 pounds), unpeeled
- 3 tbsp olive oil
- 1 tsp kosher salt
- 1/4 cup chopped fresh parsley
- 2 garlic cloves, minced
- 1/4 cup finely grated Parmesan cheese
- Salt to taste
Salted Caramel Ice Cream

Heat 1 cup sugar in a dutch oven over medium heat until sugar starts to melt
- 1 1/4 cups granulated sugar, divided use
- 2 1/4 cups heavy cream, divided use
- 1/4 cup unsalted butter
- 1/2 - to 3/4 teaspoon flaky sea salt (depending on how salty your sea salt is)
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup whole milk
Chef John Folse's Shrimp Remoulade

In a mixing bowl, combine all of the above ingredients, whisking well to incorporate the seasonings
- 1 1/2 cups heavy-duty mayonnaise
- 1/2 cup Creole mustard
- 1 tbsp Worcestershire sauce
- 1 tsp hot pepper sauce (Chef Folse likes Louisiana Gold, but Tabasco will do)
- 1/2 cup finely diced green onions
- 1/4 cup finely diced celery
- 2 tbsp minced garlic
- 1/4 cup finely chopped parsley
- 1/2 tbsp lemon juice
- salt and cracked black pepper to taste
- 3 dozen 21-25 count boiled shrimp, peeled and deveined
Slow cooker chocolate and Nutella® bread pudding

Grease (with butter or baking spray) the canister of a 3-quart slow cooker
- Butter or baking spray
- 8 cups cubed day-old bread (I used firm white bread, crust removed)
- 1/4 cup butter, melted (1/2 stick)
- 2 tsp chocolate chips
- 4 large eggs
- 1-1/2 cups skim milk
- 1/2 cup heavy cream
- 1/4 cup sugar
- 1/2 tsp vanilla extract
- 1/2 cup Nutella
- 1/4 tsp kosher salt
Sausage & Eggplant Pasta with Herbes de Provence

In a colander, toss eggplant with salt
- 2 lbs eggplant, cubed
- 1/2 tsp salt
- 1 1/2 lbs sausage of choice
- 2-3 Tbsp olive oil
- 1 large onion, diced
- 2 stalks celery, diced
- 6 cloves garlic, minced
- 1 Tbsp herbes de provence
- 1/3 cup tomato paste
- 1.5 L crushed tomatoes (approx. 2 28oz cans)

Slice the mushrooms finely, and put them into a large bowl with the oil, salt, garlic, lemon juice and zest, and go...
- 4 cups (8 ounces) finely sliced cremini or button mushrooms
- 1/3 cup extra-virgin olive oil
- 1 tablespoon Maldon or kosher salt or 1 1/2 teaspoons table salt
- 1 small clove garlic, minced
- 1 lemon, zested and juiced
- 4 sprigs fresh thyme stripped to give 1 teaspoon leaves
- 1 pound linguine or other pasta shape
- 1 bunch fresh parsley, leaves chopped, to give 1/2 cup
- 2 to 3 tablespoons freshly grated Parmesan, or to taste
- Freshly ground black pepper
