Instant Pot Vanilla Extract

Split the vanilla beans. Use the tip of a paring knife to split each vanilla bean in two lengthwise
- 6 vanilla beans, preferably grade B
- 6 cups vodka, preferably mid-priced 80% proof, such as Smirnoff or Tito's
- 1 cup water

- Electric pressure cooker with trivet or steamer insert
- 3 (16-ounce) glass jars with lids

Mussels in a Tomato Wine Broth

Rinse and scrub mussels, removing any barnacles or beards
- 1.5 lbs Mussels
- 4 Tablespoons Olive oil
- 1 medium Onion (about 1 1/2 cups) finely diced
- 3 Shallots, finely diced
- 4 Cloves fresh garlic, minced
- 1 Lemon, zested and juiced
- 3 Tablespoons chopped fresh Basil
- 2 Tablespoons Tomato paste
- 1 teaspoon Anchovy paste

- 1 Bay leaf, torn in half

- 1/2 cup Seafood stock (or vegetable stock)

1. Cook pasta until al dente, drain, and set aside

Memphis-Style Pork Ribs Recipe

1 Mix all the dry ingredients together
- 1/4 cup sweet paprika
- 1/2 cup brown sugar
- 1 Tbsp black pepper
- 1 Tbsp garlic powder
- 2 teaspoons cumin
- 2 teaspoons salt

Bucatini Pasta with Pork Ragu

- 1/4 cup extra virgin olive oil
- 1 pound ground pork
- 1 pound sweet Italian sausage
- 4 ounces pancetta or bacon (optional, but recommended)
- 1 large carrot
- 2 celery ribs
- 1 medium onion (or half a large one)
- 4 large garlic cloves (or more if they are small)
- 1/4 cup plus 2 tablespoons chopped fresh parsley
- 1 tablespoon chopped fresh oregano (or 1/2 tablespoon dry oregano)
- 2 to 3 anchovies
- 2 dry hot Calabrian chile peppers, crumbled (or 1/4 teaspoon regular hot pepper flakes)
- 1 tablespoon tomato paste (preferably Italian, from San Marzano tomatoes)
- 28 ounces can of San Marzano tomatoes (can use regular, but it won't be the same!)
- 1/4 cup dry red wine
- 1 pound bucatini pasta
- 1/2 cup grated fresh Parmesan cheese (plus more for serving)
- 1/3 cup grated fresh pecorino cheese (can just use Parmesan if not available; just add an extra 1/3 cup)
- 2 or more cups water
- Kosher salt and freshly ground black pepper to taste
- Very high quality balsamic vinegar to taste (optional)
Braised Chicken with Mushrooms

Brown the chicken Season the chicken generously with salt and pepper
- 4 * 4 chicken breast halves, 1 1/2 lb. total
- * Salt and freshly ground pepper, to taste
- 3 * 3 Tbs. unsalted butter
- 1 * 1 small yellow onion, chopped
- 1 * 1 lb. wild and/or cultivated mushrooms, sliced
- 1/4 * 1/4 cup Madeira or dry sherry

- 475 * 475ml (16 fl oz / 2 cups) dry white wine
- 150 * 150ml (1/4 pint / 2/3 cup) crème fraîche
- 225 * 225g (4 oz / 11/2 cups) cooked chicken, skinned, boned and shredded
- 115 * 115g (4 oz / 2/3 cup) cooked lean ham, diced
- 115 * 115g (4 oz / 2/3 cup) Gouda cheese, grated
- 15 * 15ml (1 tbsp) chopped fresh parsley
- * salt and black pepper
Tuscan Crown Roast Pork
