Slow Cooker Peppered Beef Shank in Red Wine

Heat a wide, deep skillet over medium high heat
- 2 to 2 1/2 pounds beef crosscut shank, fat trimmed away
- Kosher salt and freshly ground black pepper
- Vegetable or peanut oil
- 10 to 12 cloves garlic, peeled and roughly chopped
- 2 medium yellow onions, peeled and roughly chopped
- 1 large stalk celery, roughly chopped
- 1 bay leaf
- 1 rosemary sprig
- 750 ml bottle inexpensive red wine, such as Charles Shaw Cabernet Sauvignon
- 4 cups beef broth
- 2 tablespoons balsamic vinegar
Spaghetti with Clams

1. Preheat oven to 400°. Bring a large pot of salted water to a boil over high heat
- Salt
- 1/2 cup tender bread crumbs made from day-old
- country-style bread ground in a food processor
- 8 tbsp. extra-virgin olive oil
- 5 tbsp. dry white wine
- Freshly ground black pepper
- 1 cup ripe sweetest, most fragrant cherry tomatoes available,
- preferably sweet 100s, halved
- 1/2 lb. dried spaghetti
- 2 –4 cloves garlic, peeled and coarsely chopped
- 1/4 –1/2 tsp. marash pepper flakes or 2 pinches dried red pepper flakes
- 1 1/4 –1 1/2 lbs. smallest manila clams, scrubbed
- Leaves from 3 branches basil (about 1 cup), coarsely chopped
- Sprigs from 6 stems flat-leaf parsley, coarsely chopped

1. Melt 3 tablespoons butter in medium saucepan over low heat
- 3 tablespoons unsalted butter plus 24 tablespoons (3 sticks) unsalted European-style-butter, very cold
- 1 3/4 cups whole milk
- 4 teaspoons instant or rapid-rise yeast
- 4 1/4 cups (21 1/4 ounces) all-purpose flour
- 1/4 cup (1 3/4 ounces) sugar
- Salt
- 1 large egg
- 1 teaspoon cold water
Apple and Brie Omelette

1. Crack two eggs into a bowl add 1 tsp of water
- 3 eggs
- 1/8 tsp. salt

- 1/4 Granny Smith apple, peeled and cored, cut into thin slices

Tuscan Chicken and Mushroom Skillet

Arrange a rack in the middle of the oven and heat to 450°F
- 2 tablespoons olive oil, divided
- 3 pounds bone-in, skin-on chicken breasts (3 to 4 split breasts)
- Freshly ground black pepper
- 1 pound cremini mushrooms, trimmed and sliced (about 5 cups sliced)
- 1/2 cup thinly sliced sun-dried tomatoes, patted dry if oil packed
- 1 tablespoon chopped fresh rosemary leaves

- 2 * 2 carrots, peeled, thinly sliced
- 2 * 2 celery stalks, sliced
- 2 * 2 tablespoons (1/4 stick) butter
- 1 * 1 cup sliced mushrooms

- 8 * 8 ounces dried wide egg noodles

Homemade Hot Cocoa Mix
