Spicy Zucchini Soup Recipe

1 Heat the olive oil in a large pot over medium-high heat
- 4 * 4 tablespoons olive oil
- 1 * 1 onion, finely chopped
- 1/2 * 1/2 jalapeno chile (seeds, stems and ribs removed), chopped
- 3 * 3 chopped garlic cloves
- 2 * 2 pounds chopped zucchini (skin on)
- 1 1/2 * 1 1/2 cups chopped day-old bread
- 3 * 3 cups chicken broth (use vegetable broth for vegetarian option)
- 1 * 1 cup water
- 1/2 * 1/2 cup chopped fresh mint
- 1/2 * 1/2 cup chopped fresh cilantro (optional)
- 2 * 2 teaspoons lemon juice
- * Salt
- * Pepper
Baked Cheesy Chicken Rice

1. In a medium saucepan bring some water to boil
- 3 cups of cooked rice
- 4 tbsp cream of mushroom soup
- 3/4 cup of water
- 2 shallots or 1/2 onions – sliced thinly
- 3 cloves of garlic – chopped
- 1 chicken breast – cut into small cubes and marinate with some salt and pepper
- 1 cup of broccoli florets
- 1 cup of small cube carrots
- 3/4 cup of green peas
- 1/2 cup cubes cheddar
- 1/2 cup grated Swiss cheese
- A few slices of mozzarella cheese
- Some chili flakes
- Salt and pepper to taste
Garlic Dill Pickles

1 Wash jars thoroughly in warm, soapy water
- 2 quart kirby cucumbers (approximately 3 pounds)
- 1 1/2 cups apple cider vinegar
- 1 1/2 cups filtered water
- 2 tablespoons pickling salt

- 4 teaspoons dill seed
