Chocolate Chip Cookie Dough Billionaire Bars

1. Preheat oven to 350 degrees F
- For the Shortbread:
- 1/3 1/3 1/3 cup SOFT butter
- 1/3 1/3 1/3 cup granulated sugar
- 1/2 1/2 1/2 teaspoon vanilla extract
- 1/4 1/4 1/4 teaspoon salt
- 1 1 1 cup flour
- the Caramel I used 7 ounces from this recipe but the original calls for:
- 7 7 25 ounces soft caramel candies (about 25 candies), unwrapped
- 2 2 2 tablespoons heavy cream
- For the Cookie Dough:
- 1/2 1/2 1/2 cup light brown sugar
- 1/4 1/4 1/4 cup granulated sugar
- 2 2 2 T. heavy cream
- 1/2 1/2 1/2 teaspoon vanilla extract
- 3/4 3/4 3/4 cup all-purpose flour
- Pinch Pinch of salt
- 1/2 1/2 1/2 cup mini semisweet chocolate chips
- For the Chocolate Glaze:
- 4 4 4 ounces semisweet chocolate chips
- 1 1 1 tablespoon unsalted butter
Bacon and Clams Pizza

For the pizza dough: In a bowl, stir together the flour, yeast, salt and sugar
- For Jim Lahey pizza dough:
- 3 3/4 cups (500 grams) bread flour
- 2 1/2 teaspoons (10 grams) active dry yeast
- 1 teaspoon (5 grams) salt
- 1 teaspoon (5 grams) sugar
- 1/3 cup (300 grams) water, room temp’
- XV olive oil
- For the bacon and clams topping:
- 36 littleneck clams, cleaned
- 2 shallot, finely chopped
- 2 garlic clove, sliced
- 1 cup dry white wine
- 2 sprig thyme
- 1 lb bacon, sliced
- 1/2 cup crème fraîche or sour cream
- 1 tablespoon flour
- 2 egg yolks
- parsley, chopped
- XV olive oil
Rib Roast of Beef

Remove the roast from the refrigerator 2 1/2 to 4 hours before cooking
- Makes 2 servings per rib
- One 2- to 4-rib roast of beef, weighing 4 1/2 to 12 pounds

Wild Rice and Mushroom Soup

Bring a pot of water to a boil
- 1 cup wild rice
- 1 large onion, diced
- 4 celery stalks, diced
- 1 pound mushrooms, diced
- 2 cloves garlic, minced
- 1 teaspoon oregano
- 3 tablespoons all-purpose flour
- 1 cup white wine
- 1 bay leaf
- 1-2 cheese rinds (optional)
- 4 cups vegetable or chicken stock
- 2 teaspoons rosemary
- 1 cup whole milk or cream
- 1 tablespoon cider vinegar
- 2 teaspoons salt, divided
Honey Pork Stir Fry

Combine soy sauce, garlic, ginger, sesame oil, vinegar, and red pepper flakes
- 1/2 -1 lb pork, cut into 1 inch cubes (use whatever is cheap at the market that day)
- 1/2 cup less sodium soy sauce
- 4 cloves garlic, minced
- 1 tbs fresh ginger, minced or grated
- 2 teas sesame oil
- 2 tbs rice wine vinegar
- 1 teas red pepper flakes, optional
- 1/3 cup honey
- 4 tbs hoisin sauce
- 2 tbs dark brown sugar, firmly packed
- 1 tbs vegetable oil
- 1 head broccoli, cut into bite size pieces
- 1 red pepper, sliced
- 1 yellow pepper, sliced
- Mushrooms, snap peas, cabbage, or whatever other vegetables look fresh that day
- 1/4 cup sesame seeds
- 2 cups cooked brown or white rice

- 6 tablespoons unsalted butter
- 1 tablespoon olive oil
- 4 medium shallots, thinly sliced (about 3/4 cup)
- 2 teaspoons light brown sugar
- 8 ounces mixed mushrooms, such as shiitake and oyster
- 1 tablespoon fresh thyme leaves
- 2 tablespoons sherry vinegar
- Kosher salt and freshly ground black pepper
- 12 ounces taleggio cheese, sliced
- 8 slices hearty bread, such as Pullman loaf
