Roast Chicken for Salads

- 2 large whole bone-in, skin-on chicken breasts (at least 1 1/2 pounds each)

Pecan Crusted Spinach Artichoke Dip

Preheat oven to 400 degrees
- 2- 9 oz pkgs frozen Creamed Spinach, thawed
- 1-8 oz pkg cream cheese, softened
- 1/2 cup mayonnaise
- 1-14 oz can artichoke hearts, drained and coarsely chopped
- 1/2 cup (2 oz) grated Parmesan cheese
- 1/3 cup chopped onion
- 1/8 teaspoon cayenne pepper
- 1/2 cup chopped pecans
- 1/3 cup crushed herb stuffing
Easy Roast Chicken

- 1 whole chicken, 3-7 pounds
- 1 Tablespoon kosher salt
- 2 teaspoons poultry seasoning (we like Mouton's which includes ginger)
- 2 teaspoons paprika
- 1-3 Tablespoons butter (we use Smart Balance)
Favorite Clam Dip

Just something I've tinkered with since my college days to get just right
- 4 8-oz packages lite cream cheese
- 4-6 cans of chopped clams (use minced clams if you like smaller bits), drained, reserving 1/2 to 1 cup liquid
- 2 Tablespoons prepared horseradish
- 2 teaspoon Worcestershire Sauce
- 3/4 teaspoon dry mustard
- 1/2 cup sour cream.
- 1/4 teaspoon Tabasco sauce (just to give it the tiniest bite)
Skinny Clementine Martini

In cocktail shaker filled with ice, add gin, liqueur and juices
- Ice cubes
- Ice cubes
- 2 tablespoons (1 oz) gin or citrus vodka
- 1 tablespoon (1/2 oz) elderflower liqueur or clear orange liqueur
- 3 tablespoons fresh-squeezed clementine juice, fresh-squeezed pink grapefruit juice or pomegranate juice
- 1 tablespoon fresh lime juice
- 2 tablespoons club soda
- Clementine slice, pink grapefruit peel twist or fresh lime slice for garnish
