Just something I've tinkered with since my college days to get just right.

Ingredients

  • 4 8-oz packages lite cream cheese
  • 4-6 cans of chopped clams (use minced clams if you like smaller bits), drained, reserving 1/2 to 1 cup liquid
  • 2 Tablespoons prepared horseradish
  • 2 teaspoon Worcestershire Sauce
  • 3/4 teaspoon dry mustard
  • 1/2 cup sour cream.
  • 1/4 teaspoon Tabasco sauce (just to give it the tiniest bite)

Preparation

Step 1

Drain the clams and reserve the liquid. Mix all ingredients together, adding more or less horseradish to taste, thinning with as much or little of the reserved clam juice to suit your preference. (I usually use all the liquid from one can, and let the rest of it go.)

If using an electric mixer, stay on the slowest speed.

Consider adding more Tabasco sauce for extra zip, lemon juice, salt and pepper to taste.

Serve with potato chips, cucumber slices, celery and carrot sticks.
