Sesame Peanut Noodles

- For the Dressing:
- 1 tablespoon sesame oil
- 1 tablespoon garlic-infused oil
- 1 tablespoon soy sauce
- 2 tablespoons sweet chile sauce
- 1/3 cup smooth peanut butter
- 2 tablespoons lime juice
- For the Salad:
- 11/4 lbs cooked egg noodles
- 2 cups bean sprouts, rinsed
- 11/2 cups snow peas
- 1 red pepper, seeded and cut into small strips
- 2 scallions, finely sliced
- 1/4 cup sesame seeds
- 1/4 cup chopped fresh cilantro
Sausage and Kale Dinner Tart

Combine butter and flour in the bowl of a food processor
- Tart Shell
- 1 1/2 cups all purpose flour
- 1/2 cup unsalted butter, chilled
- 1 pinch salt
- 3-4 tablespoons ice water
- Filling
- 1 tablespoon butter
- 1 tablespoon olive oil
- 2 cups onion, minced
- 2 garlic cloves, minced
- 1/2 pound Italian sausage
- 1 bunch kale (a large bunch), stemmed and roughly chopped
- 1/4 cup white wine
- 1/2 cup fresh basil, cut into thin strips
- 1 egg
- 1/4 cup ricotta (or another soft cheese like feta or goat cheese)

- 1 T canola oil
- 2 onions, coarsely chopped
- 3 cloves garlic, finely chopped
- 1 jalapeño chile, finely chopped
- 2 T tamari (wheat free soy sauce)
- 2 t ground cumin
- 2 t dried oregano
- 1/2 t freshly ground black pepper
- 8 cups vegetable stock or water
- 1 lb tomatoes, coarsely chopped
- 1/2 cup tomato paste
- 8 corn tortillas, coarsely chopped
- 1/4 cup finely chopped fresh cilantro
- 1/2 cup Crispy Tortilla Strips (see additional recipe)
- 1 avocado, peeled, pitted, and cubed (optional)
Sweet Pepper Coconut Corn Chowder

- 2-3 tbsp oil
- 1 medium whole leek, finely diced
- 3 medium carrots, thinly sliced

- 1/8 tsp cayenne pepper
- 1 jalapeño pepper, diced; stems and seeds removed
- 14 oz can garbanzo beans
- 1 each medium red and yellow pepper, seeds and stems removed and thinly sliced
- 1 tbsp coarse sea salt
- 2 cups corn kernels (fresh, frozen or canned)
- (2) 14 oz cans coconut milk (or light coconut milk)
- 2 cups water

- 6 (6-inch) corn tortillas
- 1 tsp blended chili powder
- 1/2 tsp maple crystals (or sugar)
