Simmered Black Beans

1. Soak the beans in the water for at least six hours
- 1 pound black beans, washed and picked over for stones
- 2 quarts water
- 1 tablespoon canola oil or extra virgin olive oil
- 1 medium onion, chopped
- 4 large garlic cloves, minced
- 1/4 cup chopped cilantro, plus additional for garnish if desired
- Salt, preferably kosher salt, to taste
Almond Butter Cookies

- 3/4 cup (3/8 lb.) butter, at room temperature
- 8 ounces almond paste (about 1 cup)
- 2/3 cup sugar
- 2 large eggs
- 2 teaspoons almond extract

Roasted Carrots & Parsnips with Shallot & Herb Butter

Position a rack in the center of the oven and heat the oven to 450°F
- 5 large carrots (about 1 lb.), peeled
- 4 large parsnips (about 1 lb.), peeled

Fill a 6-quart pot halfway full of water, set over high heat and bring to a boil

Curried Cauliflower

Heat a large skillet on MEDIUM HIGH
- 1 tablespoon olive oil
- 1 large onion, diced
- 1 teaspoon curry powder
- 1 teaspoon kosher salt
- 1/2 teaspoon turmeric
- 1/2 teaspoon cardamom
- Pinch cloves
- (Smaller) Pinch of cayenne
- 1 head cauliflower, cored, cut into bite-size pieces (a 2 1/4 pound head yielded 1 1/2 pounds trimmed cauliflower)
- 1/2 a 15-oz can low-fat coconut milk
- 1/2 a 15-oz can broth
- 2 tablespoons cilantro, chopped (optional but does look better)
Cardamon Crescent Cookies

Preheat oven to 325 F Combine all ingredients except vanilla sugar in a food processor
- 1 cup all purpose flour
- 3/4 cup walnuts
- 1/2 cup unsalted butter, chilled and cut into 1/2-inch pieces
- 1/4 cup granulated sugar
- 1 teaspoon vanilla
- 1/2 teaspoon ground cardamom
- 1/2 teaspoon grated orange zest
- pinch of salt
- Vanilla sugar (1/3 cup sugar and 1/4 vanilla bean pulsed in a food processor and then sieved to remove and seeds)
- *can make with regular sugar
ROASTED PEPPERS WITH CHILIES AND TOMATOES

Preheat the oven to 400. Season peppers inside and out with salt
- 2 red peppers, halved lengthwise, deseeded, stalk left on
- 2 yellow peppers, halved lengthwise, deseeded, stalk left on
- Sea salt and freshly ground black pepper
- 1 clove of garlic, peeled and finely sliced
- 24 cherry tomatoes on the vine, halved
- 3 fresh red chilies, 2 sliced, 1 deseeded and finely chopped
- 2 tablespoons capers, soaked and drained
- 1 handful of black olives, pitted
- 1 bunch of fresh basil, leaves picked
- 2 tablespoons red or white wine vinegar
- Extra-virgin olive oil
- Optional: 8 slices of pancetta or smoked bacon
- 4 slices of sourdough bread
- 4 balls of mozzarella cheese, torn in half
- 2 handfuls arugula, washed and spun dry
