A highly nutritious recipe which detoxifies, kindles digestive fire and sharpens the mind
- 0 g mung beans (whole green or split green or yellow);
- 2 litres water;
- 1/2 tsp. turmeric powder;
- 2 pinch asafoetida;
- Lime or lemon juice;
- fresh root ginger;
- 2-3 cloves garlic;
- an inch of fresh root ginger;
- 1 tsp. cumin seeds
- 1 tsp. coriander seeds;
- Rock salt or herb salt.
- Makes 5 generous portions

- 4 * 4 eggs
- 1 1/4 * 1 1/4 cups vegetable oil
- 2 * 2 cups white sugar

- 1 pound medium (36 to 42 per lb.) peeled, deveined shrimp
- 3 garlic cloves, finely chopped
- 1 teaspoon finely chopped fresh thyme leaves
- 1 teaspoon kosher salt, divided

- 1 1/4 pounds mixed chicories (endive, escarole, frisée, and radicchio), cored, half sliced into ribbons, half torn into 4- to 5-in. pieces
- 1/4 cup chopped flat-leaf parsley

- 1/4 cup lemon juice
- 1 can (15 oz.) white beans, drained and rinsed

- 1/4 small Red Onion 2 cups
- Parsley, leaves and stems, roughly chopped and packed into the measuring cup

You’ll be tempted to use stock instead of water — I was — but it’s not necessary
- 3 tablespoons butter
- 1 chicken cut into 8 pieces (I prefer, as always, using the dark meat for braises such as this one, so if you are not cutting up a whole chicken, I suggest buying bone-in, skin on thighs and drumsticks — three of each should do it.)
- kosher salt and pepper
- 1 onion, diced to yields 1 1/2 cups or so
- a few stalks celery, about 1/2 cup diced
- 1 cup rice (I use Uncle Ben's Original (parboiled long grain rice) — it's what my mother always uses; my friend uses long grain basmati, rinsed 4 to 5 times in colander)
- 1 bay leaf
