- 3 tablespoons oil
- 3 big onions, chopped
- 3 garlic cloves, chopped
- 7 medium zucchini, with peel, cut into medium sized pieces
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon fresh dill, chopped
- 1 tablespoon fresh basil, chopped
- 7 cups chicken broth OR WATER
- salt and black pepper
Steamed Snapper With Pesto

- 1 stick (8 tablespoons) unsalted butter, melted and cooled
- 2 large eggs
- 1/2 cup whole milk
- 1/2 cup strong coffee, cooled
- 1 1/2 teaspoons pure vanilla extract

- Ingredients
- * Canola oil for frying
- 1/4 * 1/4 cup flour
- 1/4 * About 1/4 tsp. kosher salt

In a large pot, place 6 cups of soy milk, rice, orange rind, syrup, raisins, spices, vanilla and salt
- 8 cups vanilla soy milk
- 1 cup white jasmine rice
- 1 tbsp orange rind
- 3 tbsp maple syrup

- 13 oz package firm tofu, cut into cubes
